(Scrumptious Vegetable Patties)
I cooked these last night and my son wolfed them down. I thought I would share as I know it can sometimes be hard to get your children to eat their vegetables:yes:.
My son usually eats his vege's, but I wanted to cook something quick and simple. I have made him vege patties before but I must have gotten the mix right as he LOVED them LOL.
Ingredients:
2 medium potatoes
1/2 carrot
1/3 zuchinni
2 broccoli florets
2 cauliflower florets
1 large garlic clove, minced
2 small eggs
2 teaspoons plain flour
1/4 cup grated cheese
parmesan cheese
Grate all the veges, add eggs, cheese, mix it all together.
Grease frying pan and egg rings (I use olive oil spray with a little butter), put mixture into the egg rings (I did them so they weren't quite to the top of the egg ring). Fry until golden brown on each side, then put in the oven to crisp up (I put it at 180 deg for 10-15 mins).
I served them with a lamb french cutlet, but you could have them with any meat- or even on their own for lunch :chef:.
