Hi i'm keen to make pumpkin soup tonight for something different because my mum gave me a full pumpkin and a whole lot of veggies so i will be grateful for your help thanks bron

Hi there, this is a recipe i use and find it really yummy!! hope it helps.:thumbsup:
Ingredients
25g Butter (http://uktv.co.uk/index.cfm/uktv/Food/ingredient/aID/503712)
1 large onion, chopped
1kg pumpkin, peeled and roughly chopped into even-sized chunks
450g Sweet potatoes (http://uktv.co.uk/index.cfm/uktv/Food/ingredient/aID/510401), roughly chopped into even-sized chunks
2 tsp ground coriander (optional)
1.5 litres vegetable stock
freshly ground pepper
. In a large saucepan, heat the butter. Once melted, add the onion and cook for 5 minutes.
2. Add in the pumpkin, sweet potato and coriander, if using, mix well and fry for 1 minute.
3. Add the stock and season with freshly ground pepper.
4. Bring to the boil and simmer for approximately 15 minutes, until the vegetables are tender.
5. Transfer the soup to a food processor or blender and blend until smooth.

I know I'm too late,but I use the slow cooker one here and also have a microwave one for emergencies! That uses some tomato paste, which is rather nice in it.

Thanks i ended up roasting the pumpkin in the oven with a onion and sprinkled garlic and olive oil over the top and cooked til soft then chopped up a couple of spuds and cooked til soft then put a litre of veggie stock in with all of my ingredeintsin a saucepan and mashed it together and added a little bit of cream and put it in the blender and it was perfect yum:chef:
A tin of creamed corn added to pumpkin soup is delish too!

:chef: Pumpkin Soup
1 kg diced pumpkin
3/4 cup water
1 chicken stock cube
1 teaspoon minced garlic (optional)
1 teaspoon curry powder
2/3 cup cream
Dice pumpkin into about 3cm cubes. Place pumpkin into large casserole dish, and water, stock cube, garlic and curry.
Cover and cook on high for 12-15 minutes (depending on type of microwave)
Puree soup with blender etc stir through cream, and reheat and there you have it, quick easy simply soup.
