Hi!

Does anyone have a yummy recipe for Chicken & Vegetable Lasagne??? :chef:

Funny you should ask. I have a recipe I'm going to try out this fortnight....

CHICKEN & SPINACH LASAGNE

1 x 250g packet frozen spinach defrosted
1 x 250g low-fat cottage cheese
cooking spray
600g skinless chicken breast diced
1 cup onion diced
1 tsp crushed garlic (in jar)
1 tblsp light margarine
2 tblsp plain flour
2 cups skim milk
4 sachets Cream of Chicken cup-a-soup mix
1/4 tsp tarragon
9 lasagne sheets
1/2 cup low fat grated cheese

Preheat oven to 180.
Squeeze water out of spinach and place in bowl.
In processor, blend cottage cheese til smooth, add to spinach and fold together. Leave to one side.
Coat non-stick pan with spray, saute chicken, onion and garlic until nearly cooked.
In separate saucepan melt margarine, add in flour and combine. Slowly add in milk with whisk to avoid lumps. Add dry soup mix into milk mixture with tarragon.
When boiled, pour over chicken and mix together.
Coat lasagne dish with cooking spray, then place 3 lasagne sheets on bottom of dish.
Spoon half chicken mixture over lasagne then top with 3 more lasagne sheets.
Spread spinach mixture on top of sheets, then remaining lasagne sheets.
Spoon remaining chicken mixture over top, sprinkle cheese over and cover with foil (give the foil a coating of cooking spray so cheese doesnt' stick too much)
Bake 40 minutes, then remove foil, cook further 10-15 minutes to brown top.

Oooh, i only cook the traditional one, but that recipe sounds scrummy! Will definitely have to try it! Thanks! :thumbsup:

Bummer cottage cheese is a no no for us pregnant ones. I'll keep it in mind for afterwards though. It looks delicious.

just a something for this is that my obsetrician said you can eat cottage cheese as long as it's cooked. you shouldn't eat on its own. i ate everything i wasn't supposed to eat except shell fish which me want to :barf: getting close to it

Nicole, i finally got around to making the lasange you posted, and it was soooo yummy! Even DH said it was really good, which is unusual. :D Easy to do too! Thanks!
