Anyone got a good Minestrone soup recipe for me?
Traditional is good, lots of beans etc as well...yummo!

My minestrone is a bit of a fluke each time... It does have some general guidelines though.
1lt of stock (doesnt matter too much which)
around 1 lt of water
a crumbled up stock cube (any kind)
1 can of diced tomatoes
1 can of chickpeas, drained thoroughly
1 can of kidney beans, drained thoroughly
1 can of borlotti or cannelini beans, drained thoroughly
about 2 or 3 potatoes, peeled and large diced
about 2 or 3 carrots, halved lengthways and sliced, like semi-circles
1 large brown onion, diced
around 100grams of bacon
1/3 packet of large spirals (I use vegeroni spirals)
Cook the bacon and onion in a little olive oil.
Once cooked, add the stock and water, add salt and pepper, seasoning, parsley etc.
Wait until it gets hot and add the veggies.
After around 15 minutes, chuck the beans and pasta in.
I usually make fresh damper when I make this to go with it, you could make little damper rolls if you wanted....
It turns out pretty similar each time. :yes:
