hey there
I'm pregnant again! And i am desperately craving chicken curry! My last few attempts have been shocking! Dont know what i'm doing wrong!! I was given a recipe where u put cooked chicken,vegs & curry powder & water in a saucepan. Cook until vegs were soft & then thicken it with a heaped spoon of cornflour in water. It comes out yuk & gluggy!:barf: What am i doing wrong? Does anyone have any better idea's or can tell me where i'm stuffing up?

Hmmm ... the curries I cook don't have curry powder in them.
My basic curry, regardless of the meat and vegetables I use, contain the meat, onions, vege's .... and the following spices:
garam masala
cumin
cloves
cardamom pods
star anise
garlic
kaffir lime
salt and pepper to taste
Brown the onions and garlic, add the spices, brown the meat, then the vege's .... I either use crushed tomato's or light coconut milk depending on the flavour I want. Let it simmer until the sauce thickens - no need to use cornflour.
It's very easy ... and very tasty.
Hi, here is another recipe for you try.
2 tbl spns butter or margerine for pan and 125 grms for sauce
1/2 cup celery
1 small onion diced
1/4 cup green capsicum diced
1 level tbl spn curry powder
1/2 cup flour
1 1/2 cups chicken stock
1 1/2 cups milk
2 cups cooked chicken
Melt butter in frying pan and lightly sautee celery, onion and capsicum then remove from pan.
Sauce: Melt 125 grms butter then lightly fry curry powder. take pan off the heat and add flour and salt and pepper for seasoning. Cook flour for a minute and gradually add the chicken stock stir continously. Stir until the sauce boils and thickens. Lastly add your vegetables and chicken and let it all heat through.
