Just wondering what's the best way to store them and how long will they keep for?

With my lot I rarely have the chance of storing leftovers :D.
But if they don't eat them all I usually pop them in a container and then into the fridge.

I have successfully frozen wholemeal pikelets by putting a piece of baking paper between each one, putting all of them in a freezer bag and sucking out the air with my freezer vacuum pump.
Not sure how long they keep, but I tend to use the rest up over the course of a week or two (DS eats like a sparrow, never has more than one at a time).

Hi just wondering if anyone has a good pikelet recipes? I am trying to get DS to consume more vegies- hoping to pop in some corn, grated carrot, ???
Can anyone help?

Here try this one out
2 cup self raising flour (I use half wholemeal and half white self-raising flour)
6 eggs
4-5 cups of grated vegetables (ie. zucchini, pumpkin, carrot, peas, corn - slightly mashed)
Herbs to taste (we love lots of chopped parsley) seasoning - veggie salt (small amount) & pepper milk
Mix all ingredients together, adding milk last to get the right consistency. Cook in a frying pan with a small amount of olive oil until golden on each side., yummy!
