Hi there all,

Has anyone got a really yummy mini quiche recipe I can use?? I want to make some for an afternoon tea on Sunday and would like some ideas.

i have one its yummy and you dont need a pastry base you can either use a big tin or muffin pan sized ones so its versatile

Oh and as long as you stick to keeping your cheese milk eggs and flour the same quantities you can use a different variety of vegies bacon etc

1 cup grated cheese
1 cup milk
1 cup SR flour
5 eggs
salt and pepper
1 cup bacon or ham
1 cup of onion

generally i use the following instead of bacon and onion i alternate it a little

1/2 onion and 1/2 bacon
1 cup of mixed vegies like mushrooms capsicum corn etc whatever you prefer.

Mix it all together and cook till golden on top. Oh if you like slice some tomatoes and throw them on top before you cook it with a little extra cheese just for looks :)

Mini Leek Tarts

½ C water
450g sliced leeks
3 tabsp butter
3 eggs, lightly beaten
1 ½ C cream
¼ C grated cheese
salt & pepper
Puff Pastry

Method:
Preheat Oven 200ºC. Grease cupcake pan.
Heat large Frypan; add water, leeks & butter. Stir until water has evaporated, then turn down heat and cook until leeks are tender. Remove from heat and cool.
In a bowl mix together, eggs, cream & cheese. Mix through the cooled leeks. Season with salt & pepper.
Cut puff pastry into circles and line cupcake pan.
Pour in egg & leek mixture until nearly full. Sprinkle a little extra cheese on top.
Cook for 12-15 minutes until set and golden brown.

NB: Can substitute half the leeks for finely chopped ham, tomato etc.
