Eggless Fruit Cake

Place in saucepan:

Bring to boil and 2 teaspoons bicarbonate of soda.

Stir well, cool a little and add 2 cups self raising flour & 1 teaspoon cinnamon. Beat well.

600g canned chickpeas, drained and rinsed
3 garlic cloves, crushed or minced garlic to taste
100ml olive oil
Juice of a lemon
1 tsp ground cumin
2 tbs tahini

Put in Blender. Blend. Add 1/8 cup (or just a tiny drizzle at a time) of water and blend until quite smooth.

Great for snacks with chopped celery or carrots, or bikkies or toasted turkish bread. Great on toast too, or on sandwiches.

If you like dates or dried apricots u can make rolls. My DS loves date rolls.

Simply process a packet of dried pitted dates then form into small logs and cover with coconut. Same with the dried apricots.

pinwheel are good..........puff pastry roll out then a little tomato paste sprinkle of cheese and some ham ( some have used vegimite and cheese, nutella, mashed potato and garlic/cheese) roll it up into a roll cut and bake for a couple of min and then you have mini sausage roll thingys for atea, scones are also good or old fashioned pikelets (and i freeze pikelets for school lunches)muffins savoury or sweet

if you go about to page 5 there is a muffin recipe that is under a thread from seekrit (muesli bars?? i think it is called)
