Yep, try this:
1 cup rissoni (it's a type of pasta, barilla make it, so do a lot of other brands, it's rice shaped so it's small)
1/2 cup broccoli florets
1 x packet of heinz cook at home white sauce (in the baby food section, it's in a schet and is small)
1 small tin tuna in springwater
Bring a saucepan of water to boil and cook rissoni for time it says on packet, then add broccoli to water and continue to cook for a further 7 minutes (so the pasta is soft and the broccoli well cooked).
Drain and rinse rissoni and broccoli under cold water. Mash broccoli to a consistency your DS likes.
Drain tuna and flake finely. Mix white sauce into tuna and then add pasta/broccoli mix. Mix well and serve when cool enough.
Will be plenty for several meals.
And this:
3 x medium potatoes
1 carrot
1/2 cup broccoli
1 small tin tuna in spring water
1 minute polenta (or can use bread crumbs if you are giving him wheat)
1 spray of oil (the aerosol oil any is fine I use olive oil but you can use vegetable)
Peel potatoes and carrots. Cook all vegies in boiling water until very soft. Mash vegies well and add tuna. Form into patties and roll in one minute polenta.
Spray oil into non stick fry pan and fry patties until crisp and brown.
Once you've made him a few patties, if you add salt, pepper and tobasco sauce to the left overs, roll in polenta and fry in more oil, it's a good adult dinner too.
