Have you tried chicken patties? I just use chicken mince, grated carrot, finely chopped capsicum, chopped up broccolli and whatever other vegies are lurking in the fridge. Mix all with breadcrumbs. garlic and egg and a bit of milk, roll into flattened patties and fry in frypan. The little ones love them usually!

Chicken fingers - slice chicken breast into thick chunks, flatten slightly with a meat mallet, crumb and shallow fry till golden.
Serve with a sour cream, garlic and curry powder (small amount) sauce for dipping.
I serve them on couscous with the sauce over the top.

Chicken & Mushroom strudel
(Ill type the recipe out if you want it)

Chicken Filos
Chicken breast, shallots, julienned carrots, brie cheese, 4 sheets of filo pastry per chicken piece.
Butter and layer pastry (4 sheets) - fold in half to make a square, top with chicken then brie then veges, wrap up - brush with butter.
Bake in a moderate oven until cooked.

Fish Pie
Chicken and Leek Pie
Fish Parcels
Tacos - with lots of salad veges
Burritos - with sauted veges
Chicken Casserole
Lamb Chop Casserole
Lasagne
Grilled seasoned chicken with roasted veges
Tuna Patties (potato ones)
Tuna Noodle Cakes
* Sausage, chip (potato, carrot and sweet potato sticks), egg and cheese bake.
Bacon and Egg Pie
Savoury Mince served on mash
Cottage Pie
Sausage rolls with grated veges in them
Crumbed chicken drumsticks

I serve everything with a really great salad or tons of veges.. if I want to dress the veges up I do a herb/cheese sauce and pour that over the top.

Thanks now Im hungry and I just ate dinner
