In honour of Anzac Day, share your best Anzac Biscuit Recipes in here - and get the kids involved in making out some different versions too!

This is my Nan's Receipe and I can tell you that all the Navy Boy's that DH works with love them. :D
1 cup rolled oats
1 cup plain flour
1 cup caster sugar
3/4 cups of desiccated coconut
125g butter (not marg) chopped up into small pieces
2 tblsp of honey
1/2 teasp bicarb soda
2 tblsp boiling water
1. Combine oats, sifterd flour, sugar and coconut in a large bowl. Mix it all well
2. Put butter and honey in a med pot. Stir over a med heat until allt he butter is melted. Combine bicarb soda with boiling water in a smal container/jug. Pour it into the butter mixture, Stirbutter mixture into the dry stuff and mix well.
3. Take a heaped spoon full of the mixture and place on a baking tray about 2 cms apart. Make sure the trays are greased. Press the mixture lightly and cook in a slow oven (150) for about 15/20 mins or until golden brown.
4. Stand on the tray for a few minutes to cool down and then transfer to a cooling rack.
If you want a hard Biscuit then just leave a little longer in the oven or for a softer biscuit remove just as they are turning golden.
I generally do half and half.

Ingredients
130g butter
1 table spoons golden syrup
1 cup flour
Pinch salt
1 cup coconut
1 cup sugar
1 cup rolled oats
2 tea spoon bicarbonate of soda
2 table spoon boiling water
6 drops vanilla
Method
Preheat oven to 180 and grease three oven trays.
Melt butter and golden syrup, but dot not boil or burn.
Sift flour and salt. Then add the sugar, coconut, rolled oats and vanilla.
Dissolve the bicarbonate soda in boiling water. Mix all ingredient together and mix well.
Make mixture in to small balls on oven tray, allowing room for biscuits to spread during cooking.
Bake in oven for 10 - 15 minutes.
Allow to cool on tray it you can and then enjoy :chef:

I think they'll all be very similar! I use less sugar than the usual recipe, as my mums says "a small cup of sugar" what ever that is.

3/4 cup desiccated coconut
125g butter or marg chopped
2 tabsp golden syrup
1 & 1/2 teasp bicarb soda
2 tabsp boiling water
1. Combine sifted flour, oats, sugar and coconut in large bowl.
2. Melt butter and golden syrup together gently.
3. Dissolve bicarb soda in boiling water. Stir into butter mixture and pour over dry ingredients. Mix well.
4. Place tablespoons of mixture on greased baking trays. Bake at 160 degrees for about 15 mins or until golden brown.

I use less sugar than the usual recipe, as my mums says "a small cup of sugar" what ever that is.
I think she may mean a tea cup as that's what older people used to measure out their ingredients :idea:

If you want crunchier biscuits and you are making the version with golden syrup add an extra tablespoon or too that does the trick
