I want to make Apricot Chicken for dinner tomorrow but don't know how. Can someone give me a recipe please:D
Also, should I serve it with rice?:flowerz:

Chicken (either diced or pieces like drumsticks or marylands, whatever you prefer), about 500gms; a tin of apricot nectar; a packet of French Onion soup mix.
So that the sauce thickens you can mix a bit of cornflour through some of the nectar then add it in.
You can do it in the slow cooker if you want - that works well with pieces. Or if you're using diced throw it all in a microwave casserole dish and give it 10 minutes. Too easy!
I usually serve mine with rice. You can't go wrong - enjoy!

You can also substitute the tin of apricot nectar for a tin of apricots, and then blend them together with the french onion soup mix - it means you don't need cornflour to thicken, and its also a bit healthier because you're using the whole apricot (including all the fibre etc) than just using the nectar, which is mostly sugar.
Its delicious either way though :D
I tend to cook mine in a fry pan - dice the chicken and brown it in a fry pan, then throw the apricot/soup mix on top of it until its hot and thick, and then serve with rice and steamed vegies...

My mum always made it with 500g chicken legs, 1 packet French onion soup, 1 tin apricots (drained), one tin apricot nectar. She mixed it all together in a casserole and bunged it in the oven for 40 minutes on 200 degrees. Then she removed form the oven and added a jar of drained Spanish olives and returned to the casserole dish oven for 15 minutes. Served with rice.
Yum. Comfort food.

:iagree: Have always done ith this way, and mum has too. Though sometimes I use chicken mince cause Ds prefers it. Then I usually serve it with rice.
