View Full Version : Replacement for Almon Meal

I want to make a carrot & pineapple cake. It has 1/2 a cup of almond meal in it. I would rather just buy some and use it but if my DH knows it is in there he won't eat the cake - he reckons he is allergic to nuts (but will happily devour nutella). The cake already has SR Flour, bicarb of soda, cinnamon, caster sugar and dessicated coconut among other things. Any suggestions?

You could try some unshelled crushed sunflower seeds or some crushed flaxseed or even maybe even use more coconut. I think the almond meal softens and helps to keep the cake moist.

I'd just use them and not tell him. For such a small amount (and he eats Nutella) he probably won't even notice!

You can just substitute the same amount of flour for the almond meal but it won't have the same texture.

It is possible to be allergic to one nut and not other types because many "nuts" are not nuts at all and are not related to one another. If he finds hazelnuts OK then why not substitute crushed hazelnuts? It should have the same moistening effect but will be a bit stronger in taste.

If he complains - "Well you eat Nutella, so we know you're not allergic to hazelnuts".

You should also encourage him to get tested! People aren't usually just a little bit allergic to nuts. ;)

I might try hazelnuts and make it on the weekend. Or I might just use almond meal and make it the day before playgroup so if he refuses to eat it I can take it in for morning tea! Thanks for the suggestions.
