Im planning on making a hummingbird cake tomorrow with bananas/pineapple etc in it and the recipe states to use a 20cm springform tin.

I was hoping for a larger and higher raising cake, could I double the quantity of all the ingredients and use a 25cm springform tin instead?

Hope I dont ruin it? I wouldnt want it to rise too high and peak at top and crack. Another idea I was thinking is to make 2 cakes using the 20cm tin and putting one on top of other with cream.

What do you ladies think about my idea is that silly? or do I just add extra SR flour/baking soda. Not sure. Its for my girls Christening on Sunday!

Don't add extra anything! It won't work! I also think that just doubling it won't work - but making two separate cakes probably will... if the recipe has an icing of some type, use that as your binding in the middle...

I would make 2 cakes and put cream or icing to sandwich them together. They won't work as well if you double the recipe or put it in another tin.

Just wanted to follow up on my previous post regarding my hummingbird cake!
So far so good! Ive doubled the quantity of the original recipe and used a 25cm springform tin and it rose really nicely. Had to cook it a bit longer though. Its all covered in pink icing now and Im going to decorate it tonight so Ill get to taste it tomorrow. Cant wait
