My dads coming down today, he was telling me how he would bring a few pumpkins down (i am waitin for mine to grow still) We all love it here so its like Yes thanks heaps!
He just rings to tell me his packing etc and his on his way.....7 pumpkins included :laughing:
What am i going to do with them all? I was thinking i could slice some up and freeze it for my lasagne or vegie bakes, make some soup, well lots of soup actually LOL and maybe cut some into cubes for roasting.
Any other ideas? They are whole pumpkins i am not sure how long they keep thats all but i just dont know what else to make :confused:

What about pumpkin scones? With that many pumpkins you could set up stall and make some cash!

For breakfast or even lunch boxes, you can make pumpkin frittatta. Add chives, ham, zucchini etc.
Cold roast pumkpin & baby spinach salad with honey mustard dressing.
Pumpkin and sour cream mash. Served with lamb, or anything really!
Pumpkin Rissotto.

wow 4 months thats ages, i guess though when you buy from the supermarket its even older though hey?
Maybe i might not cut some, i just dont want to waste it all, guess there is always the neighbours too LOL

I'd make up lots of pumpkin soup and freeze it...Good easy meals for when you cant be bothered cooking :_

How long will it keep frozen for? I will make a heap of soup i know dad will take some home.
Indie isnt on solids yet and probably wont be for a while at the rate shes going as shes happy (the girls didnt eat till like 9 months when they were BF so hoping shes the same LOL)
I guess i could just freeze cubes of it though then i can use it for wraps and vegie burgers or something. Maybe i need to send them home with dad and tell him to put them back LOL
A trick I know for dealing with pumpkin overload.
To avoid all the horrible chopping normally involved I take as many pumpkins as will fit in my oven. Stab 3 or four holes in the top of each pumpkin around the stem. Put them on baking or pizza trays and bake them whole at 150c until they are soft.
This allows you to scoop the seeds and flesh out of the shell easily when they are cooked.
Put it into ziploc bags or freezer containers to be used later.
