View Full Version : Is wine really needed in risotto?!

Every recipe I have asks for white wine in risotto. I made some the other day and it came out with too much of a wine taste.
So is there a need for wine in risotto or can I just cut it out of the recipe?

YES!!!!!
Well you could leave it out, but it wouldn't taste anywhere near as good.
It is an Italian dish, no wine would be a sin.

Did you 'burn off' the wine?
You need to add it when the recipe says & ensure it is all gone before adding stock.
I have made Rissotto without wine & it has been fine. I also do not add as much as the recipe suggests.

Thanks guys. I am making it at the moment and just added half the amount instead. Hopefully it tastes just as good. :fingerscrossed:

Oh I have the bestest and EASIEST recipe for risotto, and best of all, it is weight watchers- don't let that put you off, everyone I have cooked it for has LOVED it!
Oh, and it has no wine!
Oh, I just realised I have 2 diff recipes, both WW, both no wine. The easy one is chicken and basil, and the more complicated one (because you always have to stir it) is pumpkin and sweet corn. Yum! :chef:

Nearly in every recipe you can use stock instead of wine. :yes:

I never put wine in my rissotto and if I don't make it at least once a week, there's a riot at my place!
I just use stock and fresh herbs from the garden.
What kind of wine did you use and how much?

I've never put wine in rissotto. Maybe that's where I'm going wrong :detective:

We never use wine, just stock and fresh herbs :)

I actually just found a weight watchers book on the bookshelf and it has a microwavable risotto....is that the one your talking about?
What kind of wine did you use and how much?
Not sure what kind of wine but it was white and the recipe said to put in one cup (250ml).
Tonight I just put half of that and some extra stock and herbs.

Like others have said, you can just use stock. If it's the alcohol content you are worried about, then don't. The cooking process evaporates it all - you're just left with the flavour. :)
