jonah bought home a MASSIVE bag of kale from work because no body was buying it, i ate a bit, but now i don't know what to make with it!!

does any one have any ideas???

Colcannen!! Its a traditional Irish dish and its the best.

I cant remember the exact recipe as its been a while since I made it but you just chop up some Kale really finely along with chopped spring onion and a bit of parsley. Cook and mash some potatoes with a bit of cream and butter, mix through the greens and add a bit of chopped bacon if you like. Its great on its own or as a side.

I use it nearly any way I use spinache - pies, steamed, stir fried with garlic... Don't know what variety you have but I grow a couple of different ones in the garden and they are both beautiful chopped in a salad too, especially when young. I love kale. It is so darn nutrient packed too.

Use it in anything as a substitute to spinach! That yummy spanikopta (? spinach and riccotta pastry thingo), mushroom and kale pie/omlette, pasta bake with tomato, olive and kale, potato, lentil and kale pie. Yum, the possibilities are endless!!!!!

hehe i am an uneducated one, is it somewhat similar to spinach then?
Might have to ask for it at the green grocer. Never hurts to try these things:p

I add both the bacon and the onion, but as you're vegos you could just use the onion.

To those asking about kale - it's a terrific winter vegie for a home gardener, as it's really tough and produces like mad. It's a primitive cabbage that doesn't form a head - you just pick the leaves off as you want them. Some varieties are also quite pretty. I grow Red Russian - one plant keeps us supplied from winter through to early summer.

Toddler, DP and I all love that recipe :chef: mmmm We also make it with zucchini and corn.
