Does anyone have a yummy recipe for this. I feel like this for dinner tonight.
Thanks
Basic quiche Recipe
6 eggs
1/2 carton light sour cream
1/2 carton cottage cheese
1 finely chopped onion
Salt and pepper
grated cheese for top.
Puff pastry or filo pastry for base, or spray pan with cooking spray for baseless frittata style.
Extras. any or all of the following taste great
Chicken, diced bacon, diced tomato, cooked spinach, mushrooms, diced cooked potato, corn, grated or diced zucchini or squash, cooked broccoli, diced capsicum, sundried tomatoes, salami, ham etc etc...anything goes really!
Beat eggs, sour cream, cottage cheese and salt and pepper together in a bowl
Line pan with baking paper. (then line with pastry)
put onion in the bottom of the pan. Add additional ingredients. Pour overegg mix and cook in 150c oven until edges are set and centre is just still a touch wobbly (it will continue to set when you pull it out of the oven) this keeps the quiche nice and tender and stops it going overcooked and watery.
Leave to sit for 10 to 15 mins. Serve with a salad.
