something banana

I have some overripe bananas to use..............so I am after your favourite banana cake/muffin recipe!! Or any other recipe to use up bananas.........

Banana loaf or muffins are easy and freeze up great so you can keep them for months if they last that long.

I have made this so many times now and I keep changing it too- this is the basic recipe for banana muffins though I now have to make it Dairy and Wheat Free and low sugar hence the added apple as this sweetens it with out sugar and then I don't have a hyper toddler

Muffins

1 1/2 Cups Plain Flour (wheat free if u like)
1 teaspoon Bi Carb Soda
1 teaspoon Baking Powder
1/2 cup sugar (I use less sugar and change it to Muscarvardo about 2 tablespoons with the apple)
1/2 cup butter (melted) (I use less dairy free butter with the apple -1/4 cup then)
1 egg beaten
1 cup mashed banana (more is ok)
1/2 grated apple (only if you reduce sugar)


180 degree fan forced oven
greese (muffin paper=less rise to the muffins)
Sift dry ingredients
add all dry ingredients in a large bowl
add everything else make sure butter doesn't cook the egg when you add it!!
only mix till combined
put in mini muffins, loaf tin or miffin tray
makes 12 large muffins

cook till they smell really good and spring back from touch and turn out onto wire rack to cool
really miost and taste great!!
