How do you make stuffed capsicums??

I got a recipe out of a current magazine for chicken stuffed capsicums but I was wondering if there was an easier way. You had to roast the capsicums whole for 10 minutes, then take them out, wrap in foil for a bit, then peel the skins off, cut a slice off the side and cut out the membranes and seeds.

It was really hard to do, they were all soggy and it was hard to cut the insides out while they were still hot. Some of them just collapsed and I had to salvage them with toothpicks, lol :laughing:

So, is there an easier way????

BTW, they were delicious!!!

Yep easier way = dont roast them first.

Deseed them first, cut the stem end off - pull out the seeds and membranes that you can reach - then stuff then roast.
Put them on a bed of salt if they wont stand up by themselves... pour rock salt all over the tray, and sit the capsicums in it to stop them falling over.
