Is there a secret to keeping fritters together? Mine always seem to fall apart!!
I am using vegies, egg and flour. Am I missing something?? :confused:

Mine do too.
I have found that maybe using more egg and cutting the vegies smaller helps...

i find when i put breadcrumbs in them they stick together a bit better:D

my fritter recipe
1/2 cup plain flour
1/2 cup SR flour
salt
egg
1 cup milk
I use this for any type of fritters, sweet or savoury.
sift flour and salt, add egg, then milk, beat it all together. then add it whatever I want until it looks like good proportions and cook in the pan.
mmmm, banana fritters.....

I always use one egg and two tablespoons of flour for a normal batch of fritters.. too runny and they will fall apart and too dry they will do the same thing.
If they are savoury and too runny - I add a tablespoon or two of breadcrumbs as well.

I use a combo of chickpea flour (besan) and plain flour to make fritters. half and half
The chickpea flour is quite gluey in batter form and holds everything together really well.
It also tastes really nice and I often make savory pancakes out of it and eggs, milk, and salt.
