Just last week I made a chicken and vege pie. All I used for the filling was 2 cups of cooked chicken, about 350g of frozen veges, and a 420g can of cream of chicken soup. Yummy and sooooooo easy!

I'd never made a pie before (or even used puff pastry for that matter) so I was pretty pleased with myself.

you can wrap scotch fillet steaks to make individual beef wellingtons

yum!

let me know if you want details on how to do it :)

I also use puff pastry in my pie maker (the machine cost me $10 from a 2nd hand store) but I think you can still get them new from Big W or similar and is fab for using up left overs or stewed fruit

We have Mum's Tuna Pie a lot here. It's very quick and everyone likes it.

1 400g tin tuna
1 cup frozen/tinned corn
1 onion, diced
1 cup grated cheese
1tsp dried parsley/1tbsp fresh parsley
1 egg, beaten - reserve a bit for glazing the pastry

Mix all together

Lay one piece pastry on a baking sheet, tip filling on & spread out, top with other sheet & glaze with egg.

This makes either 1 pie (2 sheets pastry) or 1 1/2 (lay filling on one half of another piece and fold the other half over). Depends on how thick you want it.

Bake for 30mins at 200deg.

I love using puff pastry to help use up old fruit. Make fruit compote with any fruit that is starting to turn/bruise, like summer fruits, apples and/or pears. I like to put cinnamon, brown sugar and nutmeg. Leave some texture to the fruit.
Halve pastry sheets. Place fruit on one half of pastry and flip over the other half. Seal with a fork. Brush with milk or eggwash, pierce with a fork to let steam escape and bake in a moderate oven until brownish. Delicious hot or cold.

I also make mushrooms ones by frying up lots of mushies in butter with some chopped onion, garlic, fresh herbs. I make these to take on picnics as they are quite yummy cold.
