:laughing: i am asking for lots this morning...

i have MIL coming for tea tomorrow night...

doing either Honey/soy bq chicken on a bed of rice, or nachos...

and want something yummy, quick and easy for dessert??

I usually do apple pie for my MIL - either make little individual ones in the pie maker (use frozen pastry and canned apples :laughing:), or I let Nanna do the cooking (you'll find Nanna in the frozen section of your supermarket :laughing::laughing:)

What about Spanish strawberries?

1 punnet strawberries
1 tbsp sugar (white, castor is best but other will do)
1tbsp balsamic vinegar
chocolate ice cream (can use vanilla instead)

Hull and quarter strawberries, lengthwise, rinse under cold water.

Put in a bowl, with sugar and vinegar and mix well. Cover and refrigerate.

Give them a quick stir every hour or so. Try to let marinate for about 3 hours but you can get away with 1 hour if you are rushed.

To serve, put some strawberries in bottom of a low ball glass (or a bowl) and one scoop chocolate ice cream on top. Yummy. :chef:

This trifle is easy peesy!!!

You need a packet jelly mix (usually port wine but any will do)
Madeira cake
Carton of custard
Whipped cream
Strawberries
Ice Cream

Make up jelly mix and put in fridge when half set put pieces of cake into it. Let jelly fully set. Put layer of custard on then a layer of whipped cream. Arrange sliced up strawberries on top.

If you're feeling creative you can add some tinned fruit (drained) to the jelly mix. You could also use something like kiwi fruit on top with/instead of the strawberries. You can also dip the cake in brandy before adding it. So many variations!!! I've also made it with a layer of strawberry mousse under the custard - the packet kind you add milk to and whip near the jellies in the supermarket.

Forgot to add that the ice cream is for serving. And its great when made the day before because everything is really set by the time you eat it just don't forget to cover it with plastic. If making the day before I don't add the cream until the day of eating.
