I have a challenge for anyone who is interested.
I am really down to the dregs of food in our house, but cannot really afford to do a huge grocery shop until Thursday. This is what I have left in my house - I need three meals out of it! PLEASE help!
Frozen peas
Frozen beans
Pumpkin
2 tomatoes
3 potatoes
2 tins sardines
2 chicken breasts
spring onions
lentils
kidney beans
3 carrots
lettuce
8 red chillies (the small hot ones!)
1/2 cucumber
rice
spaghetti
bread
chickpeas
herbs & spices
butter, garlic, mayo, eggs, flour, gravy
slivered almonds & breadcrumbs
soy sauce, worcester sauce, vinegar, apricot jam
That is it....what can I make over three nights?

You can have chicken casserole, toasted cheese sangers, and maybe rice salad or a mixed risotto.

Chicken schintzel with salad will use chicken breasts, breadcrumbs, lettuce, cucumber and tomato. Or you could have a side dish of rice with some spring onions, toasted slivered almonds, julienne carrot and some frozen peas and beans and a little chilli, leaving the salad to go with something else.
You could make a chickpea salad.
If you have some stock cubes, you could make a soup with the kidney beans, pumpkin, and some lentils, frozen peas, beans, herbs etc, some broken spaghetti. Or use the pumpkin, veg, herbs etc to make a vegetable sauce for the pasta.
I had an amazing side dish at a counter meal which was basically steamed pumpkin in a curry sauce (make a white sauce and add a small amount of curry powder, sprinkle with some parsley and bake).
Scrambled eggs on toast with some sardines on toast and a side salad if you use the rice with the chicken.
Check some vegan sites, you might have the makings of a lentil casserole or lentil salad.

There's one idea I forgot.
Cook 1 cup of lentils, drain and cool. Cook and mash your potatoes, mix through 1 tsp of vegemite and cool. Add the lentils to the potato. Add chopped spring onion, herbs to taste, 1 beaten egg to bind, and roll balls of the mixture in breadcrumbs. Flatten into patties and serve in place of rissoles, make burgers etc.

I make a really easy and simple dish where I dice up some chicken, marinate it in soy sauce and sweet chilli sauce, (maybe you could use one of your chillies and some honey instead of the sweet chilli?) and fry it off with whatever I feel like, (onion, shallots, capsicum, tomato ect), then boil some rice and mix it all together. Really easy, yummy, filling and the leftovers are good cold or heated up!

Lentil Patties with a carrot, pea and bean salad - with a soy, garlic and herb dressing.
Chicken Pasta with a olive oil and herb sauce.. saute chicken, toss with cooked pasta, olive oil and herbs.
Seasoned grilled chicken with veges
Chicken, pumpkin, chickpea and chilli casserole
Crumbed Chicken with chickpea, lettuce, cucumber and shallot salad - with olive oil, vinegar and herb dressing
Ugh I could make so much with that if it was sitting here in front of me.
(sadly - you have more food than i do atm lmao)

Hmmmm...
I can think of something...
uses 3 potatoes, oil (or butter), kidney beans, 2 tomatoes, cucumbers, 1/2 clove garlic, a few spring onions, 1 chilli
Using a potato slicer (or just a vege peeler), chop the end off the potato so the end is nice and flat, then slice thinly (like the thin-ness of a packet of chips), drizzle with oil (or melted butter if you have no oil!) and bake in the oven, at 200 degrees until crispy..like crisps (chips). Sprinkle with a little salt and pepper.
Then cut the tomatoes into 1cm cubes, same with the cucumber, slice up the spring onions, and de-seed and finely chop the chilli... and mix together with the crushed garlic 1/2 clove and the kidney beans and you have a home-made salsa.
You can eat those together... as like, salsa and chips. Kinda like nachos without hte cheese.
