would love some ideas for this weeks tea menu...

i need 6 meals.

i am going to do nachos...

i have in the freezer

sausages (pork and lime)
chicken breast
pork stir fry
mince

OH AND A PORK HOCK (SALL)

some yummy, quick and easy recipes would be great :)

chicken breasts i usually chop up and put in my slow cooker with cream and seeded mustard. (can be done in oven too). this can be served with rice or as a pasta even.

mince id do lasagne or spag bol.

Sloppy joes are always good:

Mince
Tomato paste
spring onions
garlic
onion
ked ridney beans
fresh parsely
pack of taco seasoning (or whatever seasoning you like)

Cook mince and add onions and garlic. Add the tomato paste plus some water to make it a little runny. All the rest of the ingrients.

Grill some focassia's or hambuger buns and add the mince mixture and top with cheese. Serve with Salad if you want.

Chicken breasts I would cut into long thin strips (like tenderloins) and marinade in olive oil, thyme, lemon zest, salt and pepper and cook on the BBQ and serve with a big interesting salad. Tp with lemon juice, olive oil, salt and pepper.

Mince I would make home made burgers - mince, bread crumbs, 1 egg, salt, pepper, ground cumin, wizz up in a food processor and shape into patties and cook on BBQ.

Sausages I would make devilled sausges - brown sausages, with one onion, and 1 clove garlic, add 2 tbsp tomato paste, 1 tin chopped tomatoes, 1 chopped carrot, 1 bay leaf, 2 tbsp sherry and then bake in over for 40 mins and serve with mash and steamed beans.

Pork stir fry - do you mean the plain thin strips of pork for stir frying?? If so, I would seal the pork in wok or fry pan and then remove pork from pan, add soy sauce, brown sugar and 5 spice to pan and cook until bubbling / caramelised, add pork back for one minute and serve with rice and steamed veg.

Pork hock - hmmm, would probably make red lentil soup - red lentils, pork hock, water, bay leaf, pepper, simmer until tender. Strip meat off hock and add to lentils and serve, seasoned to taste (this is not to everyone's taste!!).
