View Full Version : Ideas on how to cook fish??

I need some help on how to cook fish. DP has just been on a deep sea fishing trip and has come back with loads of fish.

The problem is I dont really know how to cook it :confused:

If it helps the type of fish we have are...

Spanish Mackeral
Shark
Coral Trout
Pink Snapper
Jewfish
Red Throat Emperor

I think there are more but cant remember what they are.

YUMMY baked - smear garlic butter on the inside of some alfoil. Put the fish on - lay tomato and sliced onions over the top, and bake till cooked....YUM!

Mmmm Im a huge garlic fan!

I'll definately give that a go.

My first experience with baking fish didnt end up well but i'll give it another go :)

It doesn't take long too cook - I usually only give it 20-25mins (as long as the oven is hot), depending on the size of the fish...you can use that same method (wrapped in foil) to cook it on the BBQ too...

You could also cook any of those fish on the BBQ...

Get him to fillet any of the fish, dip in milk then flour then crumbs, shallow fry until it flakes apart at the thickest section.
Serve with a herbed mayo or tartare sauce.
I put fresh/dried herbs and parmesan in with the crumbs for extra flavour.
When fish is that fresh - you dont need to do much to it.

Stuff whole fish with lemon, shallots, fresh garlic slices and dill, wrap in foil or baking paper and bake in moderate oven for around half an hour - depending on how big the fish is.
Check the thickest part at half an hour and see if it is white and not opaque still.

You can stuff whole fish with anything you like - fresh herbs, garlic, lemon, shallots, tomato, olives, bacon etc it just depends on your taste.
Dill and coriander go especially well with fish.
You cant stuff it up.

You could also do:

Fish cakes
Fish curry
Fish mornay
Fish pie

etc

Fillets in baked in foil in the oven basted in a mix of oyster sauce, soy sauce and sweet chilli sauce.

Otherwise same cooking style, but baste in melted butter (real butter), lemon juice and some mixed herbs instead.

:laughing: Not a prob if your willing to jump on a plane to perth :)

Unfortunately he couldnt bring any whole fish home as they were all around the 4 feet mark!! So they have already been cut up on the boat. I'll definately try the oven and the crumbing too! They sound yum!!

Bonus that they are all filleted though - you can do pretty much anything you want with them.

Grab some of those masterfoods seasoning mixes (greek, morrocan etc) and sprinkle over both sides of the fish then grill or fry and serve with a yummy salad.

You could also brush them with marinade, wrap them in filo pastry with some carrot, zucchini and shallot strips and bake in a hot oven until cooked - probably around 20 mins.

Damnit now i want fish!!
Lucky Im going to an all you can eat buffet tonight and they have seafood :D

I'm a picky fish eater and usually only go with what I know which is nz Hoki.

I place the fillet on some alfoil, put some sliced onion on top, sprinkle with salt and pepper and lemon juice (or lemon pepper). Wrap it up and cook it either under the grill or in the oven. I cook it until all the flesh is white. Garnish with a sprig of parsley.

I tend to cut the fllets into thinner, smaller pieces and then dip in seasoned flour - you can add anything you like to it - herbs, parmesan cheese etc, I then shallow fry in a mix of butter and oil - very yum!

Shark is good for battering or crumbing I believe :yes:

What about put a fillet of fish in a piece of foil, splash a bit of soy sauce and honey on it, wrap it up in the foil and bake in the oven? Yum :chef:

Dip fish fillets in seasoned flour, pan fry with a little butter or olive oil. When each side is brown pour over 1 glass of white wine and 2 chopped shallots.
Simmer for 3-4 mins or until fish flakes when forked.

The flour will make the wine into a slightly thickened sauce.
