How do you store it to stop it going brown? My kids have this fetish at the moment (so do i though ) and are loving toasted cheese and carrot on toast for breakfast
I am sick of grating carrots and i stored some in a container last night for this morning and it was a little brown looking :( i was thinking leaving it in water but not sure if that would work it does for my lettuce though, keeps that nice and fresh
Maybe there is an art to grating it if its out there can you tell me your secrets please so i dont have to spend 30 mins in the morning grating carrots LOL

Splash of lemon juice? Dunno.... apparently works for avocados!
what about a snap lock bag with the air squeezed out?

i might try those things thanks guys. I think that as its grated really thin that might be why, i thought about freezing it too but it might go to ikky. Might just have to buy one of those things that grate on demand or find a new fetish for my kids :)

When I worked in a restaurant we used to store the carrot strips (very thin strips like extra long grates of carrot -used for garnish) in water in the fridge. Maybe that would work?
Also here's a great recipe for grated carrot - may as well feed your fetish LOL
Ingredients
Makes enough for two people
1 Carrot (150g)
8 Honey Tomato (100g)
2 Tablespoons of Thousand Island Dressing (you can choose your favourite salad dressing)
2 Tablespoons of Raisin
1/2 an Apple (75g)Preparation
Grate the carrot.
Remove the apple’s core and chopped to small pieces
Chopped the honey tomato into small pieces
Combine all ingredients in a mixing bowl and mix well.

You can freeze it - it wont go icky lol
I often freeze it for my sons sammies as he likes cheese and carrot too.
Just make sure you put it in a snap lock bag with the air sqeezed out.

This might seem like a really silly question, but do you peel the carrot first?
I've never had a problem with grated carrot going brown, lasts for a few days in a container in the fridge.
I've noticed the peel goes brown very quickly though.
