View Full Version : Ideas Needed For Bbq Salads!!

Its my sons 1st birthday party tomorrow and we've desided to have a bbq but i need ideas for salads and finger food that are quick and easy to throw together at last minute that dont cost an arm and a leg... PLEASE HELP I'VE LEFT IT TIL LAST MINUTE.............

OUr potato salad is easy :D

Chop up the tatoes into chunky pieces. Pop them on an oven tray & spray with a little olive oil. Pop them in the oven for about 45 mins (turning half way).

Let them cool and season with salt & pepper. Chop up an avacado and some procuito (sp?) and mix together. The pour some Praise Potato dressing over the top.

Easy peasy!! And delish!:chef:

The key is what you said - keep it simple

potatoe salad as per first post

Tossed garden salad - mixed lettuce leaves, tommy tomatoes, sliced yellow capsicum, sliced mushroom, cubed cheese.. A bottle of balsamic vinegar dressing placed next to it for parents.

salad fingers - baby carrots or carrot sticks, zuchini sticks, celery sticks and a dip

mixed fruit platter watermelon 1 punnet strawberries, small bunch grapes, handfull cherries, 4 sliced kiwi fruit, 2 peaches, 2 necatrines etc. (disappears real quick)

KFC coleslaw


ETA - siry fry on BBQ, slice onions, mushrooms, capsicum

Hi there, our couscous salad is pretty popular:

just cook the couscous in chicken stock (stock cube/powder is fine). Add chopped parsley, spring onion and tomato (cherry are best - yum!) Add a drizzle of olive oil if you think it seems dry.

You can jazz this up with whatever you like - leftover roast vegies are great in it.

Also my Mum does sliced cucumber, tomato and onion, layered in a dish then covered in balsamic (or balsamic dressing). Very popular.

Another easy potato salad can be made with those tin potatoes diced (or if you have time peel, dice and cook normal spuds) boiled egg diced, some praise potato salad dressing or mayonaise (I use homemade mayo) and some parsley or eschallots chopped and mixed through.

Pasta salad - cooked spiral pasta, large tin or greenseas tomato and onion tuna - or similar, cherry tomatoes (halved), mix everything to gether and add chopped avocado to the top, very easy and yummy salad. YOu can add whatever else you like to, capsicum, celery etc..

Ham and Avocado on Mountain Bread
Mash avo with a bit of salt and pepper, spread on mountain bread. Add a layer of ham off the bone, roll up and cut into smaller peices, say 1 inch bits (skewer with a tooth pic if you like)

For sweet things that are quick, easy to prepare a day ahead you could make chocolate or apricot balls.

Apricot Balls

1 packet dried apricots
1 can condensed milk
2 cups coconut
extra coconut for rolling

Put the apricots in a food processor and chop till very small peices.
Add coconut and condensed milk, mix together, roll into balls and roll in coconut.
Put them in the fridge to set.

Chocolate Balls

10 weet bix
1 cup coconut
2 dessertspoons cocoa
1 tin condensed milk
1 cup sultanas (optional)

extra coconut for rolling

Crush weet bix and combine with the rest of
ingredients. Roll in coconut and put in fridge to set.

my favourite lately has been this salad

can of 4 bean mix
diced tomatoes
diced cucumber
diced avocado
diced red onion
drizzle of lemon juice
mixed herbs

just throw it all together and serve on bed of lettuce. its SOOOOO good :)

PASTA SALAD:

cook 2 - 4 cups of pasta (depends on how many people are coming, and i use bow pasta)
rinse the pasta in cool water and let cool down, then add a large amount of basil pesto and stir through to coat pasta.
then simply add small amount of semi dried tomatoes, slice black olives, diced up fetta (danish fetta is the best) and chop up some salami into small pieces, mix it all together.
you can also sprinkle some pine nuts over the top but i normally do this just before putting out and i check no one has any nut allergies.

only takes 10 - 15 mins to make, and it's always a hit at our BBQ's.

forgot to add, you could just make a platter of kabana, cheese and crackers.

I make a 7 layer salad - its easy, make it the night before
Layer of shredded lettuce
Layer of chopped up ham
Layer of sliced water chestnuts
layer of sliced boiled egg
Layer of grated cheese
layer of frozen peas
Pour over salad cream
Keep in fridge

the salad cream should drip through to the bottom and the peas thaw by the time you need to serve it the next day.
Obviously store in the fridge. If any of the ingredients dont appeal just leave them out.
Different but YUM

A yummy summer salad I like goes like this:

Mixed lettuce
Avocado
Mango
Cherry tomatoes
Pine or cashew nuts on top

Dressing: (I don't use exact measurements)
Whisk with a fork some olive oil, white wine vinegar and dijon mustard. Salt and pepper.

6 tomatoes diced
2 onions diced
2 tablespoons of coriander (jar mix)
2 freshly squeezed lemon.

combine all, leave in fridge to chill for at least an hour before serving.

Or I sometimes just make diced tomatoes wth some garlic, with a small bit of oil to dress

I make honey mustard potato salad:

3-4 medium potatoes
1/2 cup extra virgin olive oil
1 tbspn seeded mustard
1 clove garlic crushed (or 1 tspn minced garlic)
2 tbspn white vinegar
2 tbspn honey
sea salt and black pepper to taste

I just dice the potatoes to the size I like with skins on and boil in salted water. Thenwhile that is boiling mix all other ingredients together. After potatoes have cooled stir through the dressing.
