my sil gave me a whole bag full of mangos. after me and the kids eating some of the ripe ones yesterday more of them ripened today and i need some biscuit or cake recipes that are easy and simple to make.

so throw me some ideas.

mmmm mango ice cream, just get a tub of vanilla ice cream let it thaw a bit and mash up as much mango as you want, mix it through and re freeze.
easy.
ummm next time you could tell her to send em my way:p

i have a recipe for mango lime chicken here which is very yummy. let me know if you want it and I will type it up.

Mango daquari (sp?)
Lunch tomorrow bbq some chicken, add rocket lettuce & baby spinach, mango pieces and dress with balsamic vinegar yuuuum!
I've also got a mango sorbet recipe if you'd like me to find it? Oh and mango smoothies

yes i love the mango ice-cream idea but i was looking more for lunchbox type ideas and in the qld sun i don't think icecream would make it to lunch time. but i think i will buy some icecream on thursday when i get paid and smoosh some mango in it.:thumbsup:

i was hoping more for a cake or slice or biscuit recipe.

Not a cake or slice but what about mango chutney if you have any left over at the end??

if i made something like an apple tea cake and subsituted the apple for the mango would that work?

oh - i think my grandma has a recipe for mango jam - i will have to remember to call her in the morning and ask.

Biscuit base, mango filling, coconut top.

Mix some with yoghurt.

Mango muffins.

Tofu or chicken with mango and rice.

If you're really stuck, cut up the flesh and puree it, then freeze it in usable portions so you've got some for out of season.

Mango mousse is another yummy dessert but not sure how long it stays firm for to go in lunch boxes,

I've got a brilliant mango curd recipe (like lemon curd but yummier). I've made it several times as christmas gifts. Let me know if you want it.
