Does anyone have any yummy cous cous recipes? I have just discovered it and love it! but have a shortage of recipes... Thanks in advance :yes:

Stuff tomatoes with it and a few spices, capsicum and mushies its yum :) there was a recipe in womans days i will see if i can find it

I made this up last week.

Grate a carrot. Toss with lemon juice & olive oil. Rinse some butter beans (or whatever tins you have) toss in. Add cooked couscous. Add whatever else you like in salads :D

How freaky! I just made my first cous cous salad this afternoon and loved it. I'll be watching this thread for some more suggestions.

This is what I chucked in mine:

Garlic
Cumin
Toasted Pine Nuts
Capers
Red Onion
Sweet Corn Kernels
Red Capsicum
Cucumber
Feta Cheese

I boiled the cous cous in chicken stock, sesame oil and salt for some more flavour.

Roast some pumpkin, sweet potato, onion and capsicum with some spices (I use coriander, chilli and cumin spices) spray some oil over it and put in the oven til they're ... um... roasty?

cup of cous cous and cup of chicken stock together in a bowl... cover with a tea towell for 5 minutes.

When you get the veges out of the oven pour a little bit of balsamic vinegar over them.

Mix it all together and if you want it to look real pretty mix some fresh coriander amongst it too.

THIS IS YUM!!!!!

Herbed Chicken on Cous Cous

1 cup of cous cous cooked to directions

1 chicken breast (per person)
Masterfoods seasoning to your likings (ie: greek)
A couple of tablespoons of sour cream/natural yoghurt
Hot/sweet chilli sauce
Fresh herbs of your likings

Sprinkle chicken breasts with seasoning, grill until cooked.
Put cous cous on a plate - top with chicken.

Combine all other ingredients and put on top of chicken as a sauce.

Cous Cous Kievs

1 Chicken breast per person
1 Clove of garlic per breast
1 Tablespoon of parsley per breast
1 Tablespoon of butter per breast
1 Cup of cous cous cooked to directions

Flour
Milk and egg whisked together in a bowl.

Flatten chicken breasts using a meat mallet until around 1 cm thick.
Combine half cous cous, garlic, parsley and butter.
Put into middle of the chicken breast, roll up.

Coat in flour then dip in egg&milk then roll in cooked cous cous.

Shallow fry until cooked.
Or oven bake.

Punkbaby, I think I saw a similar recipe somewhere recently, thanks for reminding me, I will have a look for it too.

I made a *really* simple couscous salad yest for a picnic.

couscous
tomato (small cubes)
Cucumber (small cubes)
herb (I used basil)

then dress like a salad...(needs a fair bit)

olive oil
vinegar
salt
pepper

and put it in the fridge for an hour or more

I love CousCous!!
One of my favourite side dishes is Roasted pumpkin pieces, steamed green beans, cubed Persian Feta, mint leaves, cashews and couscous tossed together.

I used to make a spicy lasagne type thingy with thinly sliced potatoes instead of pasta sheets and couscous layers with the spicy mince and cheese but I cant remember exact inredients. I will have a dig around all the bits of paper in my recipe folder to see if I can locate it again if you're interested...

Here's a dessert recipe with cous cous:

Banana Cous Cous Pudding

1/2 cup cous cous
3/4 cup boiling water
1 split vanilla bean
1 tbsp butter
1/4 cup brown sugar
2 bananas, sliced
1 tsp ground cinnamon
1 cup thickened cream
1-2 bananas, sliced, extra for decoration

Place cous cous and vanilla bean in a bowl. Add water and leave to stand for 5 minutes. Fluff up with a fork and remove vanilla bean, scraping seeds into the mixture.
Place butter and sugar in a frying pan and cook over medium heat until melted. Add banana and cinnamon and saute 1 minute then mix into cous cous.
Place cream in a mixing bowl and beat until soft peaks form. Gently fold into cous cous mixture. Put into 4 parfait glasses and serve. Top with additional sliced banana.
