Hi
I have found a Jamie Oliver beef stew recipe that I want to try but it says put 2/3 bottle of chianti in it and I don't drink alcohol. Any ideas on what I can use instead or can I just leave it out?

im not sure what type of alchohol that is but when something asks for brandy i usually use orange juice, google it...
also if your cooking it for a long time the alcohol content cooks out!!!

otherwise lave it out and put some stock in instead...

I use chicken or vegetable stock as a substitute, even if it already calls for it, I add some more to keep the liquid level up.
Often I'll blend the stock with a mixture of sauces-maybe plum and worchestershire sauce.

As Chianti is a type of red wine, you could always try non-alcoholic versions or Grape juice but any substitution will alter the flavour of the dish so just taste after each addition. You may need to add stock or spices to boost the flavour as has been suggested.
Just for interest sake - As Lucycrystal said, the alcohol content does evaporate and you are just left with the rich flavour without the alcoholic taste. Is it the taste you dont like or are you worried about the actual alcoholic effect? There have been several tests run to document that if you are breath tested after eating a dish containing alcohol that has been cooked long enough , you generally give negative readings.....

Thanks for the replies. I'm very allergic to alcohol regardless if it is cooked for a long time or not so it's hard to eat out sometimes and follow recipes!

I can't bear the taste of alcohol, even in cooking. We just use stock in place of alcohol, but for some of the wine flavour without the alcohol, or for deglazing a pan, I use Verjuice http://www.classic.com.au/wizard/verjuice2005.htm.

I would just substitute with a beef stock instead for that recipe. It will taste different, but it will still be good.

Are you also allergic to red wine vinegar? I would add about a cup of that and a cup of water as a substitute.

once you cook alcohol doesnt it loose the alcohol content? I dont drink but for cooking I still use it as it doesnot taste like it when heated and mixed and I am pretty sure the alcohol loses its kick when cooked( i have yet to be done for dd even when on zero limit)

They say that once alcohol is cooked it looses its alcoholic content but I still get a rash from it so I have my doubts. I'm also allergic to perfume and if straight alcohol touches my skin I'll get a rash so maybe I'm just more sensitive then other people with the allergy.

You can buy non-alcoholic wines at the supermarket for a few dollars for a bottle... I always use these when cooking, as I don't really drink, and see it as a waste of money to go out and buy a bottle of wine just for a recipe...
