I had this for the first time at lunch with my MIl today and it was delicious!!! I want to start making it - but I always prefer to get recipes of people who actually use the recipe themselves - that way you know it tastes good!
Does anyone here have a good recipe for it?

Yep, and mine is SOOOO yummy, quick and easy!
Ingredients:
1 cup of finely chopped parsley
1/2 cup of finely chopped mint
1/2 cup of finely chopped coriander
4 finely chopped spring onions
1 diced tomato
1/2 cup lemon juice
2 tablespoons good olive oil
1/4 cup of cous-cous.
1/4 cup of boiling water
Salt and pepper to taste.
Method:
In a small bowl, put your cous-cous and cover with the boiling water. Cover, leave to sit until the end (or at least 2 minutes).
Combine chopped herbs, onions and tomato. Mix through until well combined. Add lemon juice and olive oil to taste, mix well. Season salad with salt and pepper, and finally add cous-cous. Mix well. Leave in refrigerator for up to 1 hour for tastes to develop, and serve cold.
Its soooo easy and yummy - and keeps really well for a couple of days in the fridge!

Mine is the same as Tams cept i add a little garlic.. :thumbsup:
I make mine with lots of barley cooked until tender. Makes the salad a bit more substantial and lots less expensive!
All measurements are approximate as I never measure anything!
at least 2 cups cooked barley (or brown rice)
large bunch of italian parsley, chopped
Large handful of chopped mint
1 large or 2 small tomatoes chopped
2 or 3 shallots chopped
Juice of 1 lemon
Salt, pepper, olive oil.
1 clove garlic chopped fine
Combine all ingredients in a bowl. Add plenty of freshly ground pepper and don't be shy with the salt (at least one BIG pinch, more if needed). A good gloop or two of olive oil.
Taste to ensure seasonings are right.
Leave in fridge for at least an hour (if you can wait that long!)

Yum! I found a recipe with Bulgar wheat (which is the type I had today) - is it much different to barley?

some recipes have buckwheat but its very crunchy, I like the couscous much better Tam!
I have a lazy packet one I found in the deli for when in a rush, its pretty good too, just add the fresh stuff....
