So who has some great recipes for cakes or slices or muffins ect...that are cheap to make and yummy?? maybe even share the brand of ingreediatn you use if thats ok! im doing my best lately to save my family money but i lovvvvvvveeee sweets hehe so am going to start making them instead of buying them:yes:

I have an easy Lemon Slice recipe, which is soooo yummy!!

INGREDIENTS

1 Packet of Marie Biscuits
125g Butter, Melted
3/4 cup of Coconut
1/2 tin Condensed Milk
1 Lemon

ICING

2 cups of Icing Mixture (approx)
2-3 dessertspoons of Butter
Lemon Juice

METHOD

1. Crush Busicuts and add in Coconut
2. Add finely Grated Lemon Rind and mix well
3. Combine Melted butter and Condensed Milk to dry mixture and and mix well
4. Press into lined slice tin and set in fridge
5. Ice when cold!!!

ENJOY!!!!!!!!!!!!!!!!!!!!!!!

Vanilla slice recipe

Sao bisquits
2 packs of fosters clark custard powder (sbustitute part of the milk with a cream if you like your custard more fattening LOL)
Chocolate or white icing for the top

Lay out the bisquits in a slice tray, prepare the custard mix (its a cold mix no need to heat it) then pour over the bisquits, place another layer of bisquits over the top and let set in the fridge. Once custard is set ice using either chocolate or white icing.

So easy and yummy too :)

Ohh you can use the home brand sao bisquits they work just as well

Cheap and quick bikkies (makes TONS!)

500g Margarine
10 Tbs sugar

Cream this 2 together

ADD

Pinch salt
1tps vanilla
1 tin condensed milk
4 cups SR Flour
4 tps baking powder
Packet of Choc Chips or whatever you want to add.

Combine.

Put in oven for about 10 min but keep checking them. DIfferent ovens different times.

Simple and cheap.

Jam Drops

Be warned though it makes a heap of biccies. Even a half batch makes tons and you need lots of jam. The dough can be frozen though.


JAM DROPS

250g butter
2 eggs
1 teaspoon vanilla
1 1/2 cups sugar
3 cups SR Flour
jam


Cream butter and sugar. Add eggs one at a time then vanilla and flour.
Mix into a firm mixture.

Roll into small balls and place on greased biscuit tray. Make a hole in the centre and place a spoonful of jam in it.

Bake for 10 mins at 180 deg C.


The jam drops are the best size if you make the balls around 10gms or so each - so I guess about 3/4 teaspoon size?

Cheesecake slice.. :chef:

1 pack of biccies, crushed
1/2 cup butter, melted

250ml cream
1 can condensed milk
2 lemons, juiced

Combine crushed biccies and butter, press into slice tin. (I line tin with baking paper/glad wrap so slice is easy to remove.. :thumbsup:)

Using electric mixer, mix cream, condensed milk, and lemon juice for 10 mins.

Pour into tin, allow to set in fridge..

Remove slice into portions and enjoy.. :chef:

So yummy, so easy, so quick, and so cheap with not many ingredients or mess while making.. :thumbsup:

Also freezes very well. I pop in freezer on tray one i cut into portions, then once frozen put in a glad zip lock bag.. Then just pull a piece out when you want it and enjoy once defrosted (only takes around 30 mins..).. Or you could freeze a whole slice and portion once defrosted..

* orange juice instead of lemon juice is another variation you can use..*
*add some chopped fresh berries for a berry cheescake slice*
*leave out lemon juice and add some choc chips for a choc chip cheesecake slice..*

Baked Banana and Date custard

1 large banana chopped
1 handful of dates chopped (or sultanas or dried apricots)
3 eggs beaten
3 tbsp sugar
1 cup milk (or for real decadence...cream)
vanilla

beat the eggs and sugar together in a bowl add milk (or cream) and vanilla, stir in dates and banana.

Cook in a buttered casserole or pudding basin in a low (120c) oven until middle is just set.

Serve immediately while still warm. If there are any leftovers it's great for brekkie cold.

Key Lime Pie

Base
200g digestive biscuits
50g butter, softened

Blitz these together and press firmly into the bottom of a lined 21cm spring-form cake pan. Leave in fridge while you make the filling.

Filling
the juice and zest of 4 limes
400mls double cream
1 can of condensed milk

Mix these together until thick and creamy, pour into the cake pan and leave in fridge to set for about an hour.

Banana Cake

½ C butter (room temperature)
1C caster sugar
2 eggs
2 mashed ripe bananas
1 teasp vanilla
½ C milk
1 ¾ C self raising flour
1 teasp bicarb soda

Beat butter and sugar together till creamy & fluffy.
Add eggs one at a time, beating well after each addition.
Stir through bananas & vanilla.
Add sieved flour & soda alternatively with milk, stirring well but gently.
Pour into greased cake pan. Bake at 180˚C for approx. 35 minutes, or until golden brown and skewer comes out clean.
Cool on rack, then top with Lemon icing.Six Minute Chocolate Cake

125g softened butter
¾ C castor sugar
2 eggs
1 C SR Flour
1 tab cornflour
3 tabs cocoa powder
¼ C milk
1 teasp vanilla extract

Sift flours and cocoa powder into large bowl.
Add all other ingredients and beat on med speed for 6 minutes.
Pour into greased and lined ring tin. Cook for 20 minutes at 180ºC, until skewer comes out clean.
Cool on rack and top with chocolate icing.

Anzac Biscuits

1 C plain flour
1 C rolled oats
3/4 C castor sugar
3/4 C desicated coconut
2 tabs golden syrup
125g butter
1 1/2 teasp bicarb soda
2 tab boiling water

Mix together flour, oats, sugar & coconut.
Melt syrup and butter together gently in microwave.
Dissolve bicarb in boiling water and stir into syrup & butter mixture.
Pour over dry ingredients and mix well.
Put tablespoons of mixture on greased baking tray.
Bake at 160 degrees for 15 minutes or until golden.

I use all homebrand ingredients, except Woolies don't make a HB castor sugar. I grew up on these and they are so quick and yummy. Also easy and don't sue any expensive ingredients!

I love making chocolate balls! :)

1 tin condenced milk
2 packets of plain biscuits (nice no brands are only 99c a packet or less)
2 tablespoons of cocoa

Smash the biscuits... and mix well with condenced milk and cocoa (may need to add a small amount of water for the right consistency) & roll into balls... They taste great frozen or even in the fridge.

We have them plain but if you feel like doing extra roll them in sprinkles or coconut... or if there just for the adults, add some rum to make them rumballs... :thumbsup:

Not a real recipe but for hot summer nights I make "Spanish Strawberries":

1 punnet strawberries
1 tbsp castor sugar
1 tbsp balsamic vinegar

Hull and quarter strawberries, rinse well and drain and place in a bowl. Sprinkle sugar over strawberries and then balsamic. Mix and cover and leave in fridge to marinate, mixing every so often.

That's it. Takes at least an hour to marinate should not be left more than 4 hours.

Serve spooned over chocolate ice-cream. This serves about 3 people.

It drives people crazy trying to guess what is in the sauce.

These are known by kids as LCMs:

1/2 tsp vanilla essence
1/4 cup butter
32 large marshmallows
4 cups rice bubbles

Melt butter, vanilla and marshmallows over low heat, stirring constantly until marshmallows have melted. Remove from heat. Add rice bubbles and stir until cooled. Press into 20cmx20cm pan. Cool and cut into squares.

I can't believe no one has mentioned the king of quick and cheap desserts, favoured by EVERYONE:

Chocolate Ripple Cake

1 pack choc ripple biscuits
1 300ml (or the small size) bottle of thickened cream
1 Tblsp castor sugar

Whip the cream and sugar together to make the cream nice and thick and stiff.
Now it's just sort of like brick laying, just smother each choc biscuit in cream, and start laying them in a log shape.

Once all the bikkies are in a log shape with cream all in between, use the remaining cream to cover the whole 'sculpture'.

If you have any bikkie crumbs left over, sprinkle them on top. Or, be like my nana and crumble up a peppermint crisp and put it on top instead.

Mmmmm delicious!
