Omg you must give this recipe a go if you cannot get your kids to eat vege's. This recipe is out of the book Deceptively Delicious . by jessica seinfeld made these tonight.

Chicken nuggets
Don't tell the kids what's in them lol.

1 cup whole wheat,white, or panko (japanese) bread crumbs
1/2 cup of flaxseed meal (linseed meal) avaliable at health food stores.
1 tablespoon grated parmasen
1/2 tspn of paprika
1/2 tspn of garlic powder
1/2 tspn of onion powder
(here's the kicker lol) 1 cup of broccoli or spinach or sweet potato puree or beets (i used pureed butternut pumkin)
1 large egg, lightly beaten
1 pound boneless, skinless chicken breast or chick tendors rinsed, dried, & cut into small chunks
1/2 tspn salt
Non stick cooking spray
1 tbspn olive oil

Method
1. In a bowl, combine the bread crumbs, flaxseed meal, parmesan, paprika, garlic powder, onion powder on the paper foil, and mix well with your fingers
2. In a shallow bowl, mix the vegetable puree and egg with a folk & set the bowl next to the breadcrumb mixture.
3. Sprinkle the chicken chunks with the salt.
Dip the chunks into the egg mixture & then toss them into the breadcrumbs until completely coated.
4. Coat a non stick frypan with cooking spray and set over medium-high heat. When the frypan is hot, add oil. Place the nuggets in frypan in a single layer, being careful not to overcrowd pan, and cook into crisp and golden omn one side, 3-4 minutes. Then turn and cook until the chicken is cooked throujgh, golden and brown all over, 4-5 min longer.

My kids and dp loved these no-one noticed that their was pumkin in these. These nuggets were lovely and i didn't have to fight with the kids to eats their vege's cause i had already had it in the nuggets lmao. Now that's Deceptive:devil:

When i have some time up my sleave I will post some more recipes. Made some yummy oatmeal cookies and marshmellow rice treats.

We don't even have a toddler in this house, but I bet my DH would love them! :laughing:

Sounds like an idea for this week! :D
