i usually just roll into balls then into cajun spice for burgers, but i'm looking for some inspiration.

Anyone have any easy tried and true recipes for chicken mince?

tachos? chicken and veg pie would be nice too. chicken pasties? i dont usually cook chicken so not many ideas sorry

I've made lasagne a few times with chicken mince, seems to work ok :thumbsup:...or you could try spaghetti and chicken meatballs?

OOOOH spring rolls!!! :chef: finely sliced cabbage, grated carrot, various asian spices (ginger, chili, coriander etc) garlic, chicken mince, all wrapped up in spring roll paper and deep fried :chef:

I usually make chicken & mushroom lasagne when I buy chicken mince. I also make these Thai Chicken Balls which are great with rice and veg:

Thai chicken balls
500g chicken mince
¼ cup oyster sauce
2 cloves garlic, crushed
1 tablespoon self-raising flour
1 tablespoon fish sauce
½ cup finely chopped coriander leaf
2/3 cup (160ml) coconut milk
Preheat oven to 200° (180° fan force). Grease two 12 hole mini muffin trays.
Combine all ingredients in large bowl. Place rounded tablespoons of mixture into prepared trays. Bake for about 15minutes.
Serve hot with sweet chilli sauce or soy sauce and sliced chillis.
Suitable to freeze.

any recipe for beef mince can be substituted with chicken mince
eg; porcupine meatballs, rissoles, spaghetti bolognaise.
chicken wraps, chicken chow mein, chicken kebabs, chicken leek and potato pie, chicken bacon and mushroom pie, chicken and vegie nuggets, chicken and pasta bake, chicken loaf, chicken sang choy bow, chicken and lemongrass stirfry,

thats a small selection of what i could find, hope this helps

Home made chicken mince sausage rolls with corn or asparagus are the bestest most yummies thing in the world..so much so I think I might make some this weekend LOL !!!

Stir fry it with some chopped onion, garlic, & whatever veg you might like (I have just used corn & peas as that's always what I have in the freezer!)
Then stir in some fish sauce, soy sauce & oyster sauce (or your fave stir fry sauce) with coriander if you have it, then some cooked rice too. It's so yummy, I always make this with leftover mince no matter what type!

Chicken wontons!

Chicken mince
shallot
ginger
garlic
soy sauce
five spice powder
wonton wrappers

optional - dried ****ake mushrooms (soak and chop)

chop everything really fine and mix into chicken mince.

Lay out wonton wrappers and use a spray bottle to mist with water. Put 1 tsp mince in center of each and gather up in a little bag shape

Put on a tray and cover with a damp teatowel if using immediately or freeze separately and then put in a freezer bag for later use

I make about 300 of these at a time with 1kg of chicken mince as they make the easiest meal with a bit of chicken stock and some fresh veg or cabbage. Instant wonton soup!

really nice with a mix of pork mince and chopped green prawns too.

Kids love them too.
