i would like carbonara pasta recipes please 4 tea tonight...
from memory i usually use cream, garlic, onions, bacon, pasta.....um yeh can't think of what else....egg...??

I just use bacon, 4 egg yolks, 1/3 cyp cream and 1/3 cup gradted cheese, parmigiano or similar is best

This is how I make it. Really quick and easy (oh, and yummy)
300g - 400g Penne pasta
1 onion diced
1 clove of garlic crushed
4 rashes of bacon (or if I'm lazy 1/2 cup diced ham)
1/2 cup fresh grated Parmesan cheese (not the dry stuff)
Tin evaporated milk
Cook the pasta. Fry the bacon, onion and garlic (or toss the ham in with cooked onion and garlic). Add pasta, parmesan and evap milk and stir over low heat. Sauce will thicken. The whole family loves it.
If I'm only cooking it for DD I use 100g pasta and reduce everything else by about 1/2.

Did you know traditional carbonara doesn't actually have cream in it?

I learnt that one off Hueys Cooking Adventures...LOL!
I have a recipe that he used for some sort of traditional recipe where at the end an egg is cracked into the middle of your pasta and mixed around. He used a bit of pasta water to mix it too. Was interesting. I must dig the recipe out, I wrote it down....somewhere.

Lol! I think I learned it off another cooking show, like Fresh or one of those hahaha.
