:chef: Has anyone got a good recipe for a low fat chocolate cake!!! I love chocolate but I am trying to watch my weight!! Thanx!!!:thumbsup:

Sorry, no low fat cake recipe but I have tried 'Betty Crockers' low fat choc fudge brownies & they are pretty good, if no one else can help maybe you could give them a go :chef:

If you can get copies of Annette Syms cookbook titled "Symply too good to be true" she has beautiful low fat variations of most recipes from entrees through to muffins, cakes etc. I use them all the time :yelclap:

If i get a chance i'll post a recipe tomorrow :fingerscrossed:

On the topic of Low fat Chocolate Cake recipes.... Does anyone know where you can get one for diabetics???

Or even better has anyone heard of a good diabetic cook book?? I saw on Mornings with Kerrianne (yes I lead a tad boring life!) that her chef (Mike Moore I think his name is :confused: ) on the program is diabetic but they never mentioned a cook book as such....

Was just wondering as I suffered with GD in my first pregnancy and I am currently showing all the signs of its return with this pregnancy.... :( but as you know in pregnancy sometimes that chocolate craving can become unbearable!!!!

As promised, here's a low fat chocolate cake :thumbsup:

This recipe is from Symply too good to be true cookbook vol2

Serves 10

1 1/4 cups SR flour
1/4 cup cocoa
1/2 tsp bicarb soda
2 egg whites
3/4 cup castor sugar
4 level tbs low fat margarine
3/4 cup boiled water

ICING
3/4 cup icing sugar
1 level tbs cocoa
1-1 1/2 level tbs skim milk

Dissolve sugar & margarine in boiled water. Sift flour, bicarb & cocoa into bowl in one go, using electric mixer beat for 1 minute, add egg whites & beat for 30 seconds more. Using a microwave round ring dish (6cup) or a microwave dish that has a seperate centre piece, coat with cooking spray, cut out grease proof paper to fit base of dish & line the base, spray top of paper with cooking spray, also spraying the centre piece. Pour in cake mix & place in centre of microwave (650 watt) on HIGH for 6 minutes. Leave in microwave for 2 minutes then remove, turn out on cake rack, peel off paper & cool.

You can cook it in an oven, using a ring tin also coated with spray, bake at 180 for 30mins

ICING: Once cake has cooled, place all ingredients into a bowl & combine well. Spread evenly over the top of the cake.

Well since you asked so nicely :D

This recipe is from Symply too good to be true cookbook vol3

Serves 12

28 squares (125g) good quality cooking chocolate
½ cup low fat margarine
1 cup water
1 cup sugar
2tsp instant coffee
2 egg whites
½ cup apple sauce (jar)
1/2 tsp bicarb soda
1 1/2 cups Plain flour
1/4 cup cocoa


ICING
1 cup icing sugar
1 ½ tsp reduced fat margarine
2 level tbs cocoa
1level tbs skim milk

Preheat oven to 180 fan forced

Put chocolate, margarine, sugar, coffee & water into ceramic bowl. Microwave on med-low for 2mins. Stir then return for 1 minute. Stir until all ingredients are dissolved. Stir bi-carb into apple sauce (it will froth) then add to bowl.

Add egg whites & mix well. Sift all flour & cocoa into bowl then gently fold ingredients until combined. Pour into a 19cm (8”) round cake tin coated with cooking spray and bake 45-50 minutes until cake springs back when lightly pressed in centre.

ICING: Once cake has cooled, sieve cocoa & icing sugar, add margarine & milk & mix until smooth. Spread evenly over the top of the cake. Refrigerate.

WoW somebody else has those Symply too good to be true cookbooks. My mother in law told me about them 2 weeks ago and i swear by them now, love every recipe i have made.
