chicken casserole/ stew recipe???

anyone got an easy chicken casserole/ stew recipe they want to share please? I have 2 sick kiddies and I have had no sleep for last 3 nights and can't think straight! I need some inspiration pulease...

This is quick and easy, you can assemble the day before and leftovers taste great!

My mums chicken casserole

Capcicum
onion
mushrooms
chicken thighs (or breasts)
gravox
can of chopped tomatoes
1/2 jar of tomato pasta sauce, 1/2 jar of water
herbs.

- Chop the capcicum, onion and mushrooms and sprinkle over the bottom of a big roast pan
- roll the chicken in the gravox so as to coat
- layer the chicken on top of veges
- Pour over the tinned tomatoes, sauce and water and herbs as desired
- cover with alfoil and bake at 200 degrees for about 45 mins - 1 hour until chicken is cooked.

Serve with rice and green veg.
