i feel like doing a chicken pasta for tea
any ideas?
looking for something different, easy and yummy :)

hi there what kinda things do you like? spicy? non spicy? will the kids be eating it?
i make a few different chicken pastas
spaghetti but with chicken instead of mince
chicken fettucine with pesto
and i make a chicken with some veg with a creamy sweet chilli sauce
any sound like something you would like and i can tell u what the ingredients i use are

would like it if DS could eat it...
I usually cook the chicken & some veges, put it all in an oven dish, pour some kind of creamy/cheesy sauce over the top & stir, then sprinkle some cheese, & breadcrumbs if I have any, over the top and bake in the oven til the top is golden.
I usually make that when I have leftover roast chicken to use up. If I plan to make something like that I often buy jars of sauces :)

Whole chicken (I usually get a red rooster one)
1 onion
4 rashes rindless bacon
handful of mushies, sliced
1/2 red capsicum, sliced
small can of corn kernels
can of creamed chicken & corn soup
cream
Take all the meat off the chicken and break it up in to edible pieces, cut up the bacon, slice the mushies, the onion & the capsicum. Fry the bacon, mushies & onion and then the capsicum. Remove the bacon, mushies, onion & capsicum from fry pan. Pour the can of soup and 1/2 can milk & 1/2 can water into the frypan and let it boil, then simmer. Put the bacon mixture back into the soup, along with the chicken and can of corn. Stir to combine, simmer for 5-10 mins. Before serving add a dash of thickened cream.
It's a rich, creamy dish but so, so yummy.
Obviously you serve it on top of pasta (I use spaghetti or spiral pasta). Sometimes I add a salad, or garlic bread.
Voila!

A packet of pasta
Some broccoli (pre-cooked a little)
Onion if desired
Small thickened cream
1 jar of sun-dried tomato and garlic pasta bake sauce
1 jar of some tomato based sauce
Extra garlic if desired
Throw together in a big dish cook til warm through, add grated cheese on top:thumbsup: back in the oven til it melts and hey presto:wizard: dinner is served:yelclap:

I make a very yummy chicken & broccoli pasta
Serves 4
Prep time: 15 mins
Cooking: 15 mins
250g Orecchiette (means little ears, which is the shape of the pasta) pasta (or bows, short shape pastas)
2 teaspoons olive oil
1 medium brown onion
1 clove garlic, crushed
2 x 340g chicken breast fillets thinnly sliced, then cut in half
125ml Chicken stock
125ml thickened cream
250g Broccoli, chopped finely into little florettes
1 tablespoon seeded mustard
Cook pasta until just tender, drain.
Meanwhile heat oil in a pan, cook the onion and garlic, stirring, until onion is soft. Add the chicken and cook until the chicken is browned and just cooked through!
Add stock, cream and broccoli; simmer, uncovered, until the broccoli is tender. Stir in the mustard.
Combine past with the chicken mix and serve....If you dont have fresh garlic use the crushed garlic in a jar, works just as well! You can add other vegies to this too, I have made it using carrot and broccoli and it taste just as good, and also works with tender beef as well!
I love it, DS loves it, mum loves it and DP loves it!

Chicken pasta salad is really nice in hot weather too. A simple quick meal that my girls like.:)
Chicken
cooked pasta - cold
capsicum (red, green, yellow)
corn kernels
celery
cucumber
and salad dressing
Just cut everything up in small pieces and mix.
