This is the recipe I've always used and it is very moist and yummy and has its own gravy:

1kg beef mince
3 large slices bread
2 eggs
1 onion
1 teaspoon mustard powder
1 tbl tomato sauce
2 tbl brown sauce (can use bbq sauce)
2 tsp salt and pinch pepper
1 tbl flour

In blender, put bread, eggs, onion, mustard, sauces and seasonings. Blend til smooth. Combine with meat and flour in large bowl and mix thoroughly. Arrange in a loaf shape about 5cm high and 7.5cm wide in roasting tin just big enough to leave margin around the loaf. Put in 200C oven for 15 minutes then turn oven down to 180C for further 45 minutes.

To make a gravy: Whilst meat is cooking, fry a small finely chopped onion in 2tbl margarine until golden brown, then stir in 1 cup beef stock mixed with 2tbl cornflour. Bring to boil, then pour over and around meatloaf 15 minutes before it is finished.

If you are going to eat the meatloaf cold, don't add the gravy.

For a different flavour, instead of 1tsp dry mustard, the tomato sauce and brown sauce, you can add
2tsp dry mustard powder
2 tsp worcestershire sauce
2 tsp mixed herbs such as basil and oregano
75ml red wine

This is my favourite meatloaf recipe:

MEAT LOAF

750g lean minced beef or sausage meat
2 tbsp chopped parsley
1 onion, chopped
1 tbsp tomato sauce
1 tsp seeded mustard
1 clove garlic, crushed
1 pkt French Onion soup
3/4 cup fresh breadcrumbs
4 bacon rashers

Preheat oven to 180oC. Combine minced beef, parsley, onion, tomato sauce, mustard, garlic, soup mix and breadcrumbs in a bowl and mix thoroughly. Pack into medium sized greased loaf tin. Bake in oven 45 mins. Top with bacon and bake for a further 20 – 30 mins or until cooked.

750g mince
250g sausage mince
1 egg
1 onion chopped fine
Soy sauce, tomato sauce
salt and pepper
Cubes of cheese
Tin of tomato soup

Mix all ingredients except cheese and soup in a bowl and then press half into a LARGE loaf tin. dot with cubes of cheese and press in other half.

Pour tomato soup over the top (may not fit the whole tin) and bake in a water bath in 180c oven until cooked (skewer test)

Moist and tasty.

A tin of condensed soup (any variety, it's up to you - be adventurous), poured over the top makes it really moist and yummy :D.

I also boil some eggs and lay them in the centre before I form it into a loaf.
