DD will be 1 in December and I am trying to think of a bright cakey that I can make her that she can eat. I can make an eggless sugarless cake but I cant think of how to decorate it without using sugar and food colouring?????

oh, i dont have an eggless sugarless cake recipe yet, anyone know one?

I have an eggless chocolate cake recipe which I made last weekend for my boy's 3rd birthday cake. It is not sugarless, however. It does make a huge cake though and as she would only be eating a little, if at all, it might be ok....


Chocolate Cake
3 cups plain flour
1 teaspoon baking soda (bicarb)
2 teaspoons vinegar
1 cup oil
2 cups caster sugar
3/4 cup cocoa
2 teaspoons vanilla
Mix in bowl: flour, sugar, baking soda, cocoa. Add the remaining ingredients. Pour 2 cups water over all. Beat until smooth. Pour batter into a 9 X 13 inch pan. Bake at 175 degrees for 35 minutes.

If you want something smaller, these chocolate cupcakes are also delicous and have less sugar:

Chocolate Cupcakes
1½ cups plain flour
3/4 cup caster sugar
¼ cup. cocoa powder
1 tsp baking powder
1tsp baking soda
½ tsp salt
5 tbl. vegetable oil
1 tbl vinegar
1 tsp. vanilla
1¼ cup. water
Pre-heat oven to 175°C. Line a one-dozen-cupcake pan with liners.
In a large bowl, mix all of the dry ingredients together. Then add the vegetable oil, vanilla and water, mixing until the batter is one even color and has become smooth.
Pour or ladle batter evenly into cupcake cups and bake for 20 minutes. Cool on wire rack.

For a frosting without sugar, you could try a cream cheese frosting:

125g butter, softened
125g cream cheese
1 teaspoon vanilla extract
Beat butter until creamy and smooth, add cream cheese and continue beating til well combined.
Gradually add vanilla. Sit in fridge for 20minutes before applying.

Could you make like a funky swimming pool using jelly a sugar free one? Not sure if she can have it thats all but we made one for dd for her bday and it turned out really well as we got those cupy dolls from spotlight and put them in lifesavers as though they were swimming i am sure you can use alternatives but it was nice and bright :)

Thanks for the recipe and the pool idea. It also occured to me I could buy frozen berries and use these to decorate, then she could eat it and it would be bright!
