View Full Version : Mushroom shaped biscuits I used to make as a kid..??

So when I was little I used to make this biscuits with my gran, they were a biscuit base that you cooked in a patty cake tin, then you put a spoon of fam, covered that with whipped cream then covered that with Chocolate icing.

We used to make a lot of little stumps with the left over dough and put them in, so they were upside down mushrooms...?

Anyone know what I am talking about and MAYBE anyone have a recipe? my gran has passed and I can't find the recipe anywhere.. any help appreicated thanks :)

OMG i so remember these!! Wow seems like ages ago i was like 5 or something LOL i might have to ask mum she might remember i hope :) fingers crossed!

How good are they!! Yep I just rang my mum and asked her to try and find the recipe in her old cookbooks, all I really need is the biscuit base recipe the rest is easy. Mum thinks it is just a shortbread but yeah is looking in her old cookbooks so hopefully one of them wil have it! Fingers crossed!

Ohh if you get it before i do you will have to share it! I used to love them LOL wow memories!!

All is going well thanks apart from lack of sleep, not long till your bubs makes an appearance!!

Ahh yes loving the sleepfilled (apart from toilet break) nights here atm, Yep not long now, I am ready though, bring it on tonight would be great! Great to hear your baby girl is treating you well!

ok so not much help from mum yet - she is renovating and cant find her old cookbooks. I am in the middle if trialing a recipe that I think is similar so will let you know how they go by tonight - fingers crossed they will be as good as the real recipe! There is no sugar in the base I cant remember if thats right, there is enough in the rest of them though lol.

I guess they are similar to a neenish tart hey?

Let you know and will definately share the recipe if a success!

You have to love those toilet breaks dont you i felt like i should have slept in the toilet the rate i was going LOL

I am I am! So excited!

Well have only done the bases so far (had DF come home for BLT's for lunch and made a batch of mini quiches for dinners for DD in the meantime) anyway they are a bit pastry like, I remember them being more biscuity... so maybe back to the drawing board.
I will still put the jam, cream and icing in them this afternoon but I am not getting too excited. They should still be good but I think it really needs to be more of a shortbread biscuit type base.

Will keep you posted.

OK sorry I have been slack on this one, The bases that I made the other day turned out to be more of a pastry so I didn't either bother filling them... I have a new batch in the oven now, definately more of a biscuit batter so hopefully these ones will work out. Let you know once I have filled and tried them..

mmm - fingers crossed - I am hanging to get this recipe right!

Mum still hasnt got her act together! So you can see where I get the slackness from,... but here are some pics to try and make up for it lol
I made them using my jam drop biscuit recipe, here they are with just the jam...

I think I made the bases a little thick, and I am not convinced they are 100% right but god they were good!

So long story short I am still working on it, harrassing mum to find her recipe book my hardest!

If you want me to post the recipe I used for these ones just let me know... otherwise I will again... keep you posted!

Aha! I have a copy of a womens weekly cookbook (one of the big '70's kinds) and it has a recipe in it for these.

Ingredients:
1 Tablespoon Jam
1/2 Teaspoon vanilla
30g butter
1 Cup icing sugar
12 tartlet cases (I could find the pastry recipe, but this is what it says in the book)
approx 1 Tablespoon milk
cinnamon

Retain any left-over pastry to make 'stems' for mushrooms. Bake stems in a moderate oven for approximately 5 minutes or until golden brown.

Place a small amount of jam into each tartlet case.
Cream butter until soft and white, gradually add sifted icing sugar, and enough milk to give a smooth consistency, flavour with vanilla.
Fill tart cases with butter cream, level the tops, dust with cinnamon and place 'stems' in position.



If you need a pastry recipe for it let me know, I can find it in the book.

Yours looked like it had chocolate on top in the picture?
Though obviously you could replace the cinnamon with thin drizzly chocolate icing.

Okay here is the Shortcrust pastry recipe:

NOTE: Basic shortcrust uses hald the amount of shortening (butter or marj) to flour.

Ingredients:
2 Cups plain flour
125g butter
3 Tablespoons water
1/2 teaspoon baking powder
1 teaspoon lemon juice
pinch of salt.

Sift dry ingredients, rub in butter until mixture resembles dry breadcrumbs. Mix to pliable dry dough with water and lemon juice.
The finished pastry, when it is mised, should form a smooth clean ball, leaving the sides of the mixing bowl clean.
Turn on to lightly floured board, press into smooth round.
Roll to size and shape required.

Sweet shortcrust: Add two teaspoons of caster sugar for every 2 cups of flour. Dissolve sugar in the water before adding it to flour, or sift 2 teaspoons icing sugar with dry ingredients.


It calls them just mushrooms.

I can't wait to try them tomorrow, sounds like kind of a mock cream filling, i think that is pretty much how you make mock cream, will have to check that out.

Not sure if I will try that filling or just the pastry with jam cream and icing like when I was little, probably both eventually but please anyone who makes them let us know how you go too!

Punkbaby looks like your mum was spot on with the shortcrust pastrym I think I will have to add the bit of sugar...

anyway thanks again!

ETA just read back over the recipe and it calls it butter cream so I guess that is pretty much mock anyway...

Yes Sasa here is the recipe :D :

BISCUIT PASTRY
1 1/2 cups S.R. flour
1/3 cup butter
1 tbspn cornflour
1 egg beaten
1/4 cup sugar
Pinch of salt

Sift flour, cornflour and salt, rub in butter. Mix into a dry dough then add beaten egg and sugar. Roll thin and cut into rounds and press into cupcake tins. Cut small pieces for stalks. Bake in moderate oven for about 25 minutes. Then cool.

Then for the cream just mix icing sugar, butter and vanilla together.

Put small amount of strawberry jam into cases then cover with cream, put stems in and sprinkle with cocoa. Put in fridge to set.:D
