Ok I want to cook dinner for the family tonight so I need some ideas on what I can make.

Needs to be likeable for a 9yr old as well, and easy enough for me to make without ruining it lol

Any one have any ideas/recipes they'd like to share?

oh and it has to be vegetarian too:D

Maybe vegetable skewers (onion, capsicum, zucchini, bits of corn on the cob sliced, whatever you like really) either plain grilled or brushed with a marinade or oil and herbs.
Serve with steamed rice.

Non vegetarian I would be very helpful but not so helpful with the vegetarian.

Or a vege stirfry with hokien noodles.

Crushed garlic, crushed ginger, onion, veges, ABC Kecap manis sauce, soy sauce, bit of honey... whatever asian type flavours you like really - or you could even get a packet of kantong honey soy marinade or something from the supermarket, that makes a stirfry even easier.

Had my mum and Step dad over last night and we had something similar to this but we had heaps of prawns in it! mmmm everyone loved it!

I normally use mince when making this one, but it is easily adapted to a vegetarian recipe.

Mexican Casserole

1 cup medium grain rice
2 cans red kidney beans
1 400g can diced tomatoes
2 tbspns tomato paste
chopped fresh coriander (optional)
2 cups grated cheese
Sour cream to serve

Boil the rice until only just cooked. (It's ok if it's still a little on the firm side, as it will cook more in the oven.)

In a casserole dish, combine the cooked rice, tmoatoes, kidney beans tomato paste & coriander. Mix all ingredients until well combined.

Top with grated cheese. Cover & cook in a moderate oven (approx. 180 deg) for about 20 mins. Remove lid & cook for a further 10 mins or until cheese is golden brown.

Serve with sour cream & garnish with fresh coriander.


This dish makes great leftovers!

What about a fried rice with peas corn onion etc

Some stuffed capsicums or grilled eggplants?

What about a vegetarian quiche.

I don't really stick to a proper recipe, it's all just thrown together...a bit like this;

Place a layer of puff pastry in a pie dish and throw in whatever you like. You could panfry some shallots and mushroom, chuck in some tomato, sweet potato, corn, asparagus etc.

Beat up about 4-5 eggs with a dash of cream or milk and add some salt and pepper. Sprinkle with cheese and cook in the oven for about 30 minutes.

Serve with a nice salad and some garlic bread.

Get a copy of Woolworths Fresh Magazine (it's free) and in it is a recipe for this vegetarian pastry thing and I made it the other night.

It has olives, fetta cheese, eggplant, red and green capsicum, pumpkin (but I substituted that for spinach) and a few other ingredients.

It was really yummy!! :D

It depends on the vegie. If you add pumpkin, capsicum,sweet potato or mushrooms, I would dice it up and cook it off first (steam or boil the potato or pan fry them all together) Same with shallots or onion, pan fry it first. Things like corn, tomato or tinned asparagus don't need to be cooked first.

Then I spread all my vegies on top of the pastry first and pour over the egg mix. Sometimes I have too much egg mixture, but I just pour it all in and let it run over the edges of the pastry. It all cooks up in the end. Fold the edges of the pastry over the top after you have added the egg mix.

Oh and don't forget to give your pie dish a spray with oil, you don't want it sticking!

I just made some mini quiches in my mini muffin tray for lunch today...they were delicious. :chef: :D

Make a big vegie shepards pie with white sauce! Just put a heap of vegies in a dish and top with potato hmm i am thinking i might like something like that tonite now LOL

So you need a 425g can of Tuna, rice, a carrot and zuchinni and any other vege if you like and also some Teriyaki soy sauce.

I use a vege peeler and peel the carrot and zuchinni (the whole thing, it's fun!) and chuck them in a fry pan for a few mins to soften and cook through.

Then stir in the tuna with a little left over 'juice', add the Teriyaki sauce to taste and serve in a bowl of rice...yummo!

The rice takes the longest to cook, but everything else can be done in under 10 mins (or faster is your a whizz with the peeler).

That should serve 3 people, so double i guess if there's more people.
