Cupcake recipe??

Has anyone got a basic Cupcake recipie??

And icing??

I am hopeless :o

I can't stop thinking of little iced cupcakes now *drools*

I use this one

CUP CAKES
125g butter
1 tsp vanilla essence
3/4 cup caster sugar
2 eggs
1&1/2 cups SR flour
1/2 cup milk

Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs one at a time, beat until combined. Stir in half the sifted flour and half the milk, then stir in remaining flour and milk. Pour mixture into 12 patty pans (in a 12-hole muffin tray.)

Bake for 15 minutes in a moderate oven 190-200, or if you want them 'peaked' slightly, increase to moderately hot (210-220)


As for icing imake a basic butter one icing sugar and soft butter with a tiny bit of milk

This one is my fave because they taste divine, and it's very quick and easy to do... just chuck it in the blender really.
