Hi
I'm very challenged when it comes to cooking (I think I'm missing that gene!). I find it hard to think of things to make when you suddenly realise there's not a lot in the fridge/pantry and it's too late to get to the shops :idea:.
Can anyone give me some 'Ready, Steady, Cook' kind of ideas of things to make for my 10 month DD when I'm pressed for time? I'm trying to give her as many fresh foods as possible, different textures, etc.
Anything would be great! :chef::chef:

Both my kids love pasta with a tin of flavored tuna stirred thru, their fave tuna if the Safcol 'gourmet on the go' tomato & capsicum one. That particular brand is pretty chunky tuna so depending on the stage your bub is at you could try a different brand (I find the Greenseas tuna to be really tiny pieces :barf: not how I like it, but good for bubs). I either use small pasta shapes, or if I have none then I just break up some of whatever pasta I have in the house before I cook it (easier to break it dry than to try to cut it small after it's cooked). My kids are 4 & 2 and still love this :)

Tuna mornay!
Tin of tuna
Pack of spiral noodles
Flour
Milk
Butter
Frozen veges (or fresh)
Cook noodles....
Make white sauce out of flour, milk and butter
Stie in tin of tuna and frozen veges
Add noodles
Yum, easy, quick and only cost about $4!!!

If you're fine with giving her eggs :) Quiche is fantastically easy and delicious and nutritious.
*btw IMO she's old enough to have eggs, but some people won't give them until after 12 months especially if there's family history of egg allergy.
QUICHE
* 6 eggs
* Little splash milk (not much at all, just a splash - and fresh cream would make it even creamier, but again just a little splash)
* Some grated cheese (depends how cheesy you want it)
* Herbs; parsley, dill, chives, basil all work well
* Then whatever you want in it - here's some suggestions: diced capsicum, chopped spring onions, chopped bacon, olives, sliced mushrooms, little florets broccoli or cauli, chopped zucchini, sticks of asparagus (I use canned, if fresh I think you might need to quickly blanche them first), etc etc, whatever is in your fridge. A really really quick and easy option is to put some frozen mixed vege's in - peas corn and carrots, for example. Then I like to put thin slices of tomato on the top at the end, and then a sprinkle of chopped parsley, it looks really nice.
* Mix together well.
Spray a pie dish (just a shallow oven-safe bowl/dish) with oil, lay a sheet of puff pastry (just the frozen stuff) in the dish (I put the frozen pastry sheet onto the dish, and then do the eggs, which gives the pastry time to thaw out, then just gently push it into place in the dish) pour the mixture in, then trim off the excess pastry. Bake in a medium oven for around 20 minutes - give the dish a jiggle and if it's really runny in the middle still, give it another 5 minutes or so.
YUM I want a quiche now :laughing: The thing is, they're so easy to make, if you make up a huge batch (12 eggs, bit of an extra splash of milk, then double everything else) you can make 2 or 3 quiches. They are even better the next day, cold, and if you have insulated luchboxes, can go to work or school for lunch too.

Scrambled eggs. Add a bit of cheese or tomato if you like.
Cheese toastie.
Baked beans. Sometimes I add steamed pumpkin or potato and cheese.
These are my...nothing in the house, need a really quick dinner meals. :)
