Chicken rissoles

Does anyone have a recipe for chicken rissoles?

My mum used to make chicken rissoles when I was a kid and from what I can remember they had chicken mince, pineapple, onion, rice (and possibly other stuff) in them. I'm not sure if that was all, or what the quantaties are.

So if anyone knows what I'm talking about, can you help me out. Maybe your mum has made them in the past, or you've made them. They were so yummy, and I've tried to make them myself just with the ingredients I mentioned but they never turn out as well as mum used to make them. Mum died many years ago so I can't ask her :banghead:

This is my recipe for them

600g chicken mince
1 chopped onion - gently fried off - hate raw onion taste
handfull of grated cheese
1 grated carrot
1 grated zucchini
2 bacon rashers chopped, again gently fried
1 egg
couple of good handfuls of dried breadcrumbs.

Mix together and gently pan fry in a non stick pan.
