We cook them every week!! DD decorates them with the tiny marshmallows and choc chips and sprinkles or even them icing flowers :)

My children are addicted to making them - and one of them loves the cake while the other eats the icing, so they really are a great team. I just get to eat all the excess......also not that great for the shape!
I recently found a shaker of those little sprinkles in the shapes of dolphins, dinosaurs, stars, teddies etc - boy are we in big cupcake mode at the moment!!

Yes and eating them LOL and betty crockers vanilla icing just about makes them perfect!

Don't bet on it Lesley..I've gained almost 10kgs since having Lincoln 4 months ago (sh!t, he is 4 months :eek:)

Maybe I need to make some 'healthy' cupcakes.....but I roolly loike my raspberry and white chocolate ones :o

My 15mth old, used to take a bite and then spit the icing out, eating the cake, I've converted her though now lol!! She eats it all.

All the sprinkles just at the supermarket are great. They have dinosaurs, butterflies, hearts, and the dollar fives that come in sparkly colours are gorgeous!!!!

Pity I have an sick tummy at the moment :(, or I'd be making some to eat. All I've had the last 3 days is plain white toast :gloomy:

oooohhhh you can't go talking about making cup cakes and then not share your favourite recipes with us!

I've been bitten by the baking bug - but I'm too scared to try and make cakes from scratch:o Don't want DH and DS to be too afraid of my cooking:laughing:

So, anyone going to share their recipes? Come on! I'm pregnant and have a good excuse for eating 48 cup cakes this weekend :D

Okay well this is my top secret recipe, but I suppose I can share :D

Preheat oven to 180 deg. You can use Muffin pans (20min baking time) Cupcake pans 15min, or mini's about 10min.

In a medium sized bowl

150 softened butter - room temp
3/4 cup caster sugar
1/2 cup milk
2 eggs
2 cups SR flour
2 teaspoons of lemon juice
dash of vanilla extract

Beat until changed colour. And bake as above.

Top with

250g unsalted butter, whipped until smooth and then add in 1 kg of icing sugar, give or take, depends on how sweet you like it. This makes lots of icing. Enough to ice at least 48 cupcake sized cupcakes. I just make a bit batch and store it in the fridge.
