View Full Version : How do you cook your vegies?

Hi, I'd love some ideas please, particularly how you cook vegies for your toddlers, but also recipes for the whole family.I serve my poor dd steamed brocolli, carrot and colliflower with some sprinkled parmasan on top, which is nice, but every day! I have no ideas how else to cook vegies :)She's allergic to eggs too so it rules out a couple of things, but if you have a great recipe with eggs tell me anyway please because she should grow out of it.Thank-you,Cheers :) xx

Hi,
we often have roasted potato,pumpkin and red capsicum (if I had a toddler who would eat veggies he would eat it too but he is a right pain with food). I cut up the potato into quite small cubes (about 3cm) and the pumpkin into about 5cm pieces and the capsicum into about 5cm pieces too and then toss them all with extra virgin olive oil,crushed garlic,salt and pepper and some fresh thyme from the garden. Put them in a roasting pan and roast in a hot oven (200-220 degrees) for about 40 minutes. They smell great as they are cooking and are really tasty and it is really quick and easy. We often also have corn on the cob with it as well (we just microwave that for 7 minutes and it is done).

usually steamed or boiled and served with gravy, cheese or white sauce...yum

Lightly steam them for most meals, but with a roast I toss sweet potato, pumpkin and potato in olive oil and tuscan seasoning and bake it

Roasted, boiled, steamed baked with a cheese sauce either way we usually have a variety of ways each week to keep things interesting :)

Some times I grill them, roast them, steam or boil them.. I cut them different ways to keep it interesting for DD, she loves different shapes.. She loves corn on the cob too, steamed or roasted are faves...

Grilled tomatoes with herbs and cheese on top

Pumpkin and potatoe bake - cubed pumpkin and potatoe in casserole dish. mix bottle of cream with french onion soup mix then pour over. Sprinkle with a littel cheese. Bake until veg are cooked.

Steamed brocoli - melt some butter in frying pan add breadcrumbs, then toss bbrocoli through

Steamed carrots in butter and honey

Cauliflower and brocoli with cheese sauce

Just some ideas off the top of my head. Can you even just vary the veg you offer? When bub has mash for dinner(usually whatever vegies I happen to have, steamed) I often chop up some ham and baby spinach and stir that through with some cheese - he loves that.

Have you tried raw vegies? Bianca LOVES raw carrot, but not cooked and I've given her a bit of celery, but you HAVE TO MAKE SURE you get ALL of the stringy bits off. Raw is great coming up to Summer too!

These sound so yum :) I made the cheese sauce last night, it turned out really well... dd didnt eat it but I did :) hehe. Great ideas, thanks. Going to make grilled tomato today.

I usually just steam my vegies in the microwave

When roasting, I use pumpkin, carrot, potato and sometimes onion- put them in a baking dish and drizzle with olive oil, and then sprinkle season all and some paprika over the top- OMG so good!

And corn on the cob is excellent on the BBQ with BBQ sauce! :)
