Think i spelt that right lol i have some and need some idea's ive made slice just wondering if anyone else had some ideas?

How about zucchini slice :chef:

2 Zucchini - grated
3 rashers bacon - diced ( using ham is okay)
1 large onion - diced
1 cup tasty cheese - grated
1 cup SR flour
6 eggs
1/2 cup vege oil
salt and pepper

throw all ingredients into a bowl and mix
Pour mixture into a grease tin approx 16cmx26cm bake in moderate oven for 30-40mins or until golden brown

I'm not a big fan of zucchini, but this is YUMMY! :D

Chop up about 3 or 4 medium sized zucchinis sliced is fine or diced (i prefer sliced) put them in a casserole dish with a tin of chopped tomatoes and an onion. I basically make sure i have more zucchini than tomoto. Add a little water to the base of the dish (about an inch) bake in the oven for 40 minutes, then top with breadcrumbs and grated cheese and bake till golden brown on top!

Its yummy and easy :D

INGREDIENTS

4 medium zucchinis
parsley leaves
1 garlic clove, sliced or finely chopped
¾ cup grated parmesan
½ cup bread crumbs
Salt and pepper
¼ cup olive oil
4 large fresh tomatoes

METHOD

Pre-heat oven at 200°C or 180°C fan-forced.

Slice lengthways down the middle and carefully remove seeded part of zucchini with teaspoon. Roughly chop scooped out zucchini, parsley and garlic together on a large chopping board. Combine in medium bowl with cheese and bread crumbs, season to taste.

Refill zucchini with filling; drizzle baking tray with ½ of the oil, line with chopped tomatoes and place zucchini boats on top, drizzle again with olive oil; bake in pre-heated oven for 20-30 minutes or until cooked.

this is what i do

slice zucchinis and fry them off in the pan for a about 5mins adding a punch of salt and pepper

put in a baking dish add a jar of pasta sauce. I love the 5 bros brand, Add some tasty cheese and some mozzerilla and bake until soft. Beautiful!


Or this is another quick easy dish


Slice zucchinis, quarter mushrooms and some sliced bacon or pepperoni fry them off in the frying pan add salt pepper

boil some pasta

add some pasta sauce to the zucc,mush,bacon cook until soft and serve mixed in with the pasta.
Add cheese on top! yummo:chef:

Mmmm yummo Zuchini Cake:


Zucchini Cake

Ingredients (serves 6)
1 cup (150g) plain flour
150g caster sugar
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
250g grated zucchini
150g raisins
150g sultanas
75g chopped toasted pecans, plus a few whole, to garnish
2 eggs
1 tsp vanilla extract
1/2 cup (125ml) olive oil
Lemon icing:
1 cup (150g) sifted pure icing sugar
1 tsp finely grated lemon rind
1-1 1/2 tbs lemon juice
Method
Preheat oven to 180°C. Grease and line the base of a 25 x 10cm loaf pan.
Sift flour, sugar, cinnamon, baking powder, soda anda pinch of salt into a large bowl. Add zucchini, raisins, sultanas and pecans. Whisk together eggs, vanilla and oil, and stir into dry ingredients. Pour into prepared pan and bake for 1-1 1/4 hours or until a skewer inserted into cake comes out clean. Allow to cool slightly, then place on a wire rack to cool completely.
To make the icing, combine the icing sugar, rind and juice, and stir until the mixture is smooth. When the cake is cold, drizzle with icing, allowing it to run down the sides, and top with extra nuts. This cake keeps well for 4-5 days in an airtight container.

Mmmmmm they all sound yummie i reson it will be fritters or the boats yummo! and am going to get more so i can do your recipie punkbaby!
