hi does any one know how to make salsa dip pls and has anyone any ideas on what to make fora 13th birthday party thanks .

This one you cook, and then cool completely before serving. Can be made in advance.

Homemade thick 'n' chunky salsa


Ingredients

1 tablespoon olive oil


1 brown onion, finely chopped
1 long red chilli, finely chopped
1 small green capsicum, finely diced
1 tablespoon tomato paste
500g tomatoes, diced
Method


Heat oil in a saucepan over medium heat. Add onion and cook, stirring, for 3 to 4 minutes or until soft. Add chilli and capsicum. Cook for 2 minutes or until tender. Stir in tomato paste and tomatoes. Bring mixture to the boil.
Reduce heat to medium-low. Simmer, uncovered, for 15 minutes or until thick. Remove from heat. Cool completely.
This one is a fresh salsa - no cooking

Ingredients (serves 8)


2 spring onions, finely sliced
4 tomatoes (about 650g), seeds removed, finely diced
1 each of red, yellow and green capsicum, seeds removed, finely diced
4 tbs (1/3 cup) roughly chopped flat-leaf parsley, plus extra to sprinkle
1/4 cup (60ml) olive oil
Juice of 1 lime
Method


To make the fresh salsa, combine the spring onion, tomato, capsicum, parsley, olive oil and lime juice. Season with salt and pepper.
